MINIATURE PEANUT BUTTER TREATS
This recipe is one of my family's favorites, and I make the treats a lot, especially at Christmas. I have three children and eight grandchildren, and every one of them loves those "peanut butter thingies," as the grandchildren call them! -Jodie McCoy, Tulsa, Oklahoma

- In a bowl, combine the butter, sugars, egg, peanut butter and vanilla; beat until smooth. Combine the flour, baking soda and salt; gradually add to creamed mixture. Cover and chill for 1 hour or until easy to handle., Roll into 42 walnut-sized balls; place in greased miniature muffin cups. Bake at 375° for 8-9 minutes. , Remove from oven; gently press 1 peanut butter cup into each cookie, forming a depression. Cool for 10 minutes before removing to wire racks to cool completely.

- In a large sauce pan over medium heat, melt the sugar, corn syrup, and peanut butter until smooth and evenly combined. Remove from heat. Quickly add the salt and cereal and stir to combine thoroughly. Add the chocolate chips and stir again. Wait about 1 min and add the chopped candy, quickly folding the mixture together so as to not smash up the candy. Line a baking sheet with parchment paper and drop rounded tablespoons onto the sheet. Let cool (or you can eat them while they are warm and gooey- try and resist them!) and enjoy! I got about 30 Rice Krispy "balls" out of this recipe- it just depends what size you make them.

A Tip From JAP Member Deneece Gursky - - to make this cookie even easier just go purchase a tube of Pilsbury Peanut Butter Cookie Dough and following the instructions on this recipe. - In a bowl, combine the butter, sugars, egg, peanut butter and vanilla; beat until smooth. Combine the flour, baking soda and salt and gradually add this to your creamed mixture. Cover and chill for 1 hour our until easy to handle.
- Roll into walnut size balls; place in a greased miniature muffin cup pan. Bake at 350° for 8 minutes.
- Remove from oven and gently press one peanut butter cup into each cookie, forming a depression. Cool for 10 minutes in pan until removing to wire racks.
- Note: If it looks like the peanut butter cup is melting too quickly just put the pan in the frig for a few moments.
