- 1. Cook macaroni as directed on box. Cook and stir butter, onion, salt and pepper over medium heat until onion is slightly tender. Stir in flour. Cook over low heat, stirring constantly, until mixture is smooth and bubbly; remove from heat. Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in cheese until melted; add tuna and peas.
- 2. Place macaroni in ungreased 2 quart casserole. Stir cheese sauce into macaroni. Sprinkle bread crumbs (I love Progresso's Panko bread crumbs) over top. Bake, uncovered, in 375 degree oven for about 30 minutes.
- 3. This goes nicely with a green salad on the side. And a glass of wine, if the mood dictates...

- Place bread in a toaster oven on medium heat to dry and toast, 20 minutes.
- Bring a large pot of water to a boil; add salt, then pasta; cook to al dente; drain.
- Place tuna in a small skillet; add in wine and just enough water to cover fish.
- Add bay leaf and peppercorns; bring liquids to a boil; decrease heat to simmer and cover skillet.
- Poach fish 12 minutes.
- Meanwhile, heat a large deep skillet over medium heat; add in olive oil and 2 tablespoons butter.
- Add in shallots and mushrooms; season with salt and pepper; sauté gently for 5 minutes.
- Sprinkle in thyme and flour; cook 1 minute, stirring with a whisk; whisk in chicken broth, then cream.
- Adjust seasonings; add in peas.
- Remove cooked, poached tuna to a bowl; flake fish with a fork.
- Add cooked noodles and tuna to the sauce; remove sauce from heat and transfer mixture to a casserole dish.
- Use the biggest holes on a box grater to grate the bread into large crumbs.
- Melt remaining 2 tablespoons butter in a small cup in the microwave and pour melted butter over breadcrumbs.

- Start a pot of water boiling and add the egg noodles when it comes to a boil. Then reduce heat to med-high, or a temperature that will keep the noodles simmering. Stir occasionally.
- While noodles are cooking, heat a skillet to med-high heat. When hot, add the olive oil and butter. Then add the onion and celery. Cook until vegetables are soft and translucent.
- Turn heat to low and add the garlic, dill, garlic powder, onion powder, salt, and pepper. Stir well and cook 20 seconds. Remove from heat and set aside to cool.
- While vegetables are cooking, check on the noodles so they don’t overcook. When they are just a little softer than al dente, take off heat, drain, and rinse with cold water. Set aside.
