EASY RHUBARB PUDDING CAKE
From a neighbor, very simple and great rhubarb pudding bottom. Reminds me of a pineapple upside-down cake. I'm not a big fan of rhubarb but this is excellent and easy.

RHUBARB PUDDING CAKE
In this unusual recipe from the 1950's a rhubarb cake makes its own pudding (sauce or topping) on the bottom as it bakes. Scoop out a serving and flop it over to showcase the pretty sauce. Good with ice cream.

I veganized the original recipe and also made it gluten-free. If you like a moist cake, I think you will like this one.
