Steps:
- Mix all the topping ingredients together in medium bowl, mix till crumbly.
- Preheat oven to 400°F
- Combine all filling ingredients in large bowl and toss well to coat.
- Transfer to 8x8 dish.
- Crumble topping evenly on top.
- Bake till fruit is tender when pierced with fork and top is crisp, 30-35 minutes.
- At 20 minutes, cover with foil if needed to keep top from over-browning.
- Cool 20 minutes, serve.

- Peel and cup up apples. Place in pot with 1/2 cup water. Cook over medium heat until tender and all liquid has evaporated - about 20 minutes.
- Wash and cut rhubarb into 1 inch lengths. Wash and half strawberries. Add rhubarb, strawberries and one cup of white sugar with the apples. Turn into a glass casserole dish.
- Blend brown sugar, flour, oats, margarine and spices together until crumbly. Spread mixture over top of the fruit. Bake at 350 degrees for 30 - 40 minutes.

STRAWBERRY RHUBARB CRISP
Steps:
- Preheat the oven to 350 degrees F.
- For the fruit, toss the rhubarb, strawberries, 3/4 cup of the granulated sugar and the orange zest together in a large bowl. In a measuring cup, dissolve the cornstarch in the orange juice and then mix it into the fruit. Pour the mixture into an 8-by-11-inch baking dish and place it on a sheet pan lined with parchment paper.
- For the topping, in the bowl of an electric mixer fitted with the paddle attachment, combine the flour, the remaining 1/2 cup granulated sugar, the brown sugar, salt and oatmeal. With the mixer on low speed, add the butter and mix until the dry ingredients are moist and the mixture is in crumbles. Sprinkle the topping over the fruit, covering it completely, and bake for 1 hour, until the fruit is bubbling and the topping is golden brown. Serve warm with ice cream.

I love most fruit crisps. I came up with this recipe when I did not have enough of each to make a recipe. I have a recipe for cinnamon ice cream that would be fabulous with this. Have not tried that as of yet.

Steps:
- Preheat oven to 350 degrees.
- Combine chopped apples and rhubarb in large bowl.
- Sprinkle lemon juice over fruit and stir to coat.
- Sprinkle 1/2 cup white sugar over fruit and stir to coat.
- Butter an 11 x 7 inch baking dish.
- Place fruit mixture in prepared dish.
- In separate bowl, combine quick cooking oats, brown sugar, flour and cinnamon till combined.
- Cut in cold butter till mixture is crumbly.
- Place dry mixture evenly over fruit.
- Bake for 40-45 minutes or till fruit is tender and crust is golden brown.
- Serve warm with whipped cream or ice cream.

- Preheat oven to 350 degrees F (175 degrees C). Butter a 9x13-inch baking dish.
- Mix apples, rhubarb, 1 cup white sugar, 1/4 cup flour, and 1 teaspoon cinnamon in a bowl until thoroughly combined; spread fruit mixture into bottom of prepared baking dish.
- Mix quick oats, 1 1/2 cup flour, and brown sugar in a separate bowl; cut butter into the oats mixture until crumbly. Spread the oats mixture evenly over the fruit mixture. I came across this recipe in a magazine, and with a few adjustments I was able to make it into a delicious crisp. It goes great with vanilla ice cream and one can also alter the recipe to make a mango raspberry crisp which is just as delightful! Optional: sprinkle the top with a handful of rolled oats and brown sugar.

- Wash strawberries, remove stems and cut in half. If very large, cut in quarters.
