RHUBARB PUDDING DESSERT

Of the many recipes I've tried with rhubarb as the main ingredient, this is the one my family thinks is best. We can't wait for spring to arrive and the rhubarb to sprout.

Rhubarb Pudding Dessert image

Steps:

  • In a large bowl, combine the crumbs, sugar and butter; set aside 2 tablespoons. Press remaining crumbs into an ungreased 11x7-in. baking dish. Bake at 350° for 8-10 minutes; cool. , For filling, in a large saucepan combine sugar and cornstarch. Add rhubarb and water; bring to a boil. Cook and stir for 2 minutes or until thickened. Stir in food coloring if desired. Spread over the crust; chill. , Combine whipped cream and marshmallows; spread over rhubarb layer. Prepare pudding mix according to package directions for pie filling; spread over marshmallow layer. Sprinkle with reserved crumbs. Cover and refrigerate for 4 hours or overnight.

  • In a bowl, combine the flour and sugar; cut in butter until the mixture resembles coarse crumbs. Press into a greased 13x9-in. baking pan. Bake at 350° for 10 minutes. , Meanwhile, for filling, combine sugar and flour in a bowl. Whisk in cream and eggs. Stir in the rhubarb. Pour over crust. Bake at 350° until custard is set, 40-45 minutes. Cool. , For topping, beat cream cheese, sugar and vanilla until smooth; fold in whipped cream. Spread over top. Cover and chill. Cut into bars. Store in the refrigerator.

Nikki's Best Rhubarb Dessert Ever image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Mix 3 cups flour and brown sugar in a large bowl; cut in softened butter with a knife or pastry blender until mixture resembles coarse crumbs. Reserve 1 1/2 cups flour mixture; pat remainder into the bottom of a 9x13-inch pan.
  • Bake in preheated oven until crust is lightly browned, about 15 minutes.
  • Beat eggs in a large bowl; mix 1/4 cup flour, white sugar, half-and-half, and salt into eggs, beating until smooth.
  • Sprinkle chopped rhubarb over baked crust. Pour egg mixture over rhubarb; top with reserved flour mixture.
  • Bake in preheated oven until eggs are set and lightly browned, 40 to 45 minutes.

Steps:

  • In a small saucepan, combine the rhubarb, 2 tablespoons sugar and water. Bring to a boil, stirring constantly. Reduce heat; simmer, uncovered, until tender, about 10 minutes. Transfer to a small bowl; cool to room temperature., Place strawberries and remaining sugar in a food processor; cover and process until pureed. Stir into rhubarb mixture. Fold in whipped cream. Spoon into 2 parfait glasses or dessert dishes. Cover and refrigerate until chilled. Garnish with additional berries if desired.

Strawberry/Rhubarb Cool Whip Pie image

Steps:

  • Simmer rhubarb, 5-6 strawberries and sugar in small saucepan until cooked down. Set aside in bowl to cool.
  • Dissolve gelatin completely in 2/3 cup boiling water, stirring about 3 minutes. Spoon 3 tablespoons of gelatin mixture into the rhubarb mixture and let cool. Add 2 cups ice cubes to gelatin and stir until gelatin is thickened, about 2 to 3 minutes. Remove any unmelted ice.
  • Pour rhubarb mixture into the graham cracker pie shell and put into refrigerator to set.
  • Beat powdered sugar and cream cheese together until creamy. Add Cool Whip and beat until fluffy. Add gelatin and beat until smooth and fluffy. Fold in sliced strawberries. Pour into cooled graham cracker crust over the set rhubarb/strawberry mixture.
  • Refrigerate at least 3 hours, or overnight.

  • In a small bowl, combine the flour, butter and walnuts. Press into an ungreased 13-in. x 9-in. baking dish. Bake at 350° for 20-25 minutes or until lightly browned.
