TEXAS PECAN RICE

- Preheat oven to 400°. In a Dutch oven, heat butter over medium-high heat. Add mushrooms and green onions; cook and stir until tender, 3-5 minutes. Add rice and garlic; cook and stir 3 minutes. Stir in pecans, salt, thyme, pepper and cumin. Add consomme and water; bring to a boil., Bake, covered, until liquid is absorbed and rice is tender, 1 to 1-1/4 hours. Transfer to a serving bowl. Top with bacon and, if desired, pecan halves.

BREAKFAST RICE PUDDING
Steps:
- Cook rice according to package directions. , Preheat oven to 375°. In a large bowl, combine rice, peaches, cherries, cream and 1/4 cup brown sugar. Transfer to a greased 1-1/2- qt. baking dish., Combine oats, coconut, pecans, butter and remaining brown sugar; sprinkle over rice. Bake, uncovered, until golden brown, 25-30 minutes.

CINNAMON-PECAN PANCAKE BREAKFAST CASSEROLE
You'll never look at a short stack the same way again! Say hello to this pancake casserole-layers of fluffy pancakes baked in a cinnamon-spiked custard. If you're short on time, use store-bought pancakes.

- Butter an 8-inch-square baking dish; set aside. Put 3 tablespoons of the butter in a microwave-safe small bowl or liquid measure; microwave for 30 seconds to 1 minute to melt the butter.
- Whisk together the flour, baking powder, baking soda, 3 tablespoons of the sugar and 1/2 teaspoon salt in a large bowl. In a separate small bowl, whisk together the buttermilk, 2 of the eggs and the melted butter. Add the wet ingredients to the dry ingredients and stir until just combined.
- Heat a large nonstick skillet or griddle over medium heat. Melt a little of the remaining 1 tablespoon butter in the pan. Working in batches, pour the batter by 1/4 cupfuls into the skillet and cook until the bottoms are golden brown and small bubbles appear on the tops, 2 to 3 minutes. Flip and cook until golden brown on the other sides, about 2 minutes. If the pancakes brown too quickly, reduce the heat to medium-low. Transfer the pancakes to a plate as finished. Repeat until all the batter is used, adding more butter to the skillet as necessary. (You should have at least 12 pancakes.)
- Whisk together the half-and-half, vanilla, the remaining 5 eggs, the remaining 3 tablespoons sugar, the cinnamon, nutmeg and 1/4 teaspoon salt in a large bowl.
- Shingle the pancakes in the prepared baking dish. Pour the egg mixture evenly over the pancakes. Cover the dish with plastic wrap and refrigerate for at least 8 hours up to overnight to allow the pancakes to soak in the custard.
- Preheat the oven to 350 degrees F. Remove the plastic wrap from the casserole and bake until the custard is set and the center feels firm but springy, 50 to 60 minutes. Let cool 15 minutes before serving.
- Meanwhile, put the maple syrup and pecans in a small saucepan. Bring to a simmer and cook until the syrup has reduced and thickened slightly, about 5 minutes. Remove from heat and keep warm.
- Pour the pecan-maple syrup over the casserole. Serve with extra maple syrup on the side.
RICE AND PECAN BREAKFAST CASSEROLE FOR 1
I think I got this off the Delicious Living website. The author's name was Elisa Bosley. Really quick in the microwave and you could try changing the nuts for variety, although the pecans are really good in this.

EASY RICE BAKE CASSEROLE

- Preheat oven to 350 degrees F. Butter a large casserole dish.
- In a large pan over medium-high heat, saute onions with 2 tablespoons of butter and cayenne until translucent. Add the spinach and cook for 3 minutes. Set aside.
- In a large bowl, whisk together milk and eggs.
- Add the cheese, rice, parsley, thyme, basil and spinach mixture and combine well. Season with salt and pepper.
- Pour into prepared casserole dish and top with extra shredded cheese. Bake for 30 minutes and serve piping hot.
WILD RICE AND TOASTED PECAN PILAF

- Preheat the oven to 375°F. In a small baking pan toss the pecans with the butter, the thyme, and the salt until they are coated well and toast them in the middle of the oven for 10 minutes, or until they are crisp and fragrant.
- In a flameproof casserole cook the onion and the bell pepper in the oil over moderately low heat, stirring, for 5 minutes, or until they are just softened, and with a slotted spoon transfer them to a bowl. Add the rice to the casserole and cook it, stirring constantly, for 1 minute. Stir in the broth, heated to boiling, and salt and pepper to taste and bring the mixture to a boil. Bake the mixture, covered, in the middle of the oven for 40 minutes. Stir in the onion mixture, bake the pilaf, covered, for 30 minutes more, or until the rice is tender and the broth has been absorbed, and stir in the pecans.
WILD RICE AND PECAN CASSEROLE
Steps:
- Melt butter in large skillet, add mushrooms, onion, bell pepper and garlic. Cook 5 minutes. Add pecans. Cook 1 minute.
- Add rice and broth, season with salt and pepper. Cover and bring to a boil. Reduce heat.
- Cook until rice is done, about 45 minutes.

- In a large skillet, saute apples, pecans, raisins, brown sugar, cinnamon, and margarine until apples begin to soften, stir often, approximately 6 minutes.
- Place in a buttered 9x13 baking dish.
- In a large mixing bowl, combine eggs, orange juice, salt, and flour and beat till mixture is smooth, and stir around edges of bowl.
- Pour over apple mixture. Sprinkle with 4 tablespoons sugar, and cinnamon, about 1 tablespoon.

MORNING PECAN CASSEROLE
This casserole has a crunchy, pralinelike layer topping. This is a easy, make-ahead brunch dish.

- 1. Brown the sausage patties according to package directions. Cut patties into bite size pieces. Spread bread cubes in bottom of a lightly greased 3 quart rectangular baking dish. Top with sausage pieces.
- 2. In a large bowl, whisk together milk, eggs, vanilla, nutmeg & cinnamon. Pour over bread and sausage, pressing lightly to thoroughly moisten the bread. Cover and chill for 8 hours or overnight.
- 3. For topping, in a small bowl combine pecans, brown sugar, butter, and maple syrup. Drop by teaspoonfuls over top of egg mixture.
- 4. Bake, uncovered, at 350^ for 45 to 50 minutes or until a knife inserted near the center comes out clean. Let stand for 15 minutes before serving.
PEACHES AND CREAM BREAKFAST RICE

- Combine water, peaches, rice, peach preserves, vanilla bean paste, and salt in a multi-functional pressure cooker (such as Instant Pot®). Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
- Release pressure using the natural-release method according to manufacturer's instructions, for 15 minutes, then release remaining pressure using the quick-release method.
- Melt coconut oil in a skillet over medium heat. Add pecans, sugar, and cinnamon. Cook and stir until pecans are toasted, 2 to 3 minutes.
- Stir pecan mixture into the rice. Divide mixture into 4 serving bowls and top each bowl with 1 tablespoon cream. Serve immediately.
