Each winter in early February my friends and I gather for an outdoor show called Mittenfest. We skip the Bloody Marys and fill our thermoses with these hot cocoas instead.

Rich Hot Chocolate image

Steps:

In a small saucepan, heat heavy whipping cream, milk, chocolate and sugar over medium heat just until mixture comes to a simmer, stirring constantly. Remove from heat; stir until smooth. If desired, add rum. Pour into 2 mugs; top with sweetened whipped cream.

Vanilla rum, optional

HOT CHOCOLATE MIX

This mix will keep all winter if stored in an airtight container. A dollop of fresh whipped cream is a perfect complement to a mug of cocoa, but you can also add a pinch of cinnamon for Mexican hot chocolate or a candy cane for a taste of mint.

Hot Chocolate Mix image

Steps:

In a large bowl, combine sugar, cocoa, and salt, and whisk to combine well. Store the mixture in an airtight container.
For individual servings, pour 1 cup whole milk into a microwave-safe mug, and microwave on high just until hot. Add 2 tablespoons of cocoa mix, and stir to dissolve. For a larger batch of cocoa, warm the milk in a saucepan set over medium-low heat, taking care not to let the milk boil; as it warms, stir in 2 tablespoons of mix for each cup of milk.

Steps:

1. Stir and mix all ingredients into a large container.
2. The mix makes 1 gallon, plus the cremora jar. Mix and stir very, very well. Place 2-3 Tablespoons of mix in mug and fill with hot water or heat in microwave.
3. A scoop of vanilla ice cream makes this a special treat. Add marshmallows to cup before microwaving. Try a dollop of cool whip or a squirt of whipped cream. A quarter teaspoon of instant coffee helps keep the cold out on a chilly night or an early morning.

Best Ever Hot Cocoa Mix image

Steps:

Combine ingredients in large bowl.
Working in two batches, pulse ingredients in food processor until chocolate is finely ground.
Store in airtight container for up to 3 months.
Too make hot cocoa, stir 1/3 cup of the mix into 1 cup of hot (not boiling) milk.
Top with whipped cream or mini marshmallows and a little chocolate powder. I sometimes use cinnamon or nutmeg powder, instead. A little brandy and a crackling fire make for a real treat!
