RICK'S MACARONI AND CHEESE

I got this from the AOL Members Recipe Board several years ago. I'm not usually a fan of mac & cheese made with eggs, but this recipe is an exception. It's rich and delicious - but definitely not for the diet-conscious.

Rick's Macaroni and Cheese image

Steps:

  • Toss drained macaroni with melted butter.
  • Stir in eggs and half and half. Mix well.
  • Add Velveeta, sharp cheddar and co-jack cheeses. Mix well.
  • Spray a 13" x 9" baking pan with cooking spray.
  • Pour macaroni mixture into pan.
  • Top with mozzarella cheese.
  • Bake at 350 degrees for 30 to 45 minutes until brown and bubbly.

1 lb macaroni, cooked, rinsed with cold water
1/2 cup butter, melted
2 eggs, mixed with a fork
2 cups half-and-half
1 cup Velveeta cheese, diced (8 ounces)
2 cups shredded sharp cheddar cheese (8 ounces)
2 cups shredded colby-monterey jack cheese (8 ounces)
2 cups shredded mozzarella cheese (8 ounces)

This delicious dish puts a new twist on traditional macaroni and cheese. The three different cheese flavors blend wonderfully. Plus, it's easy to prepare-I plan to make it often when husband Ken and I start traveling.

Rich 'n' Cheesy Macaroni image

Steps:

  • Cook macaroni according to package directions; drain. Place in a greased 2-1/2-qt. baking dish. In a saucepan, melt 4 tablespoons butter. Stir in the flour, salt and sugar until smooth. Gradually stir in milk. Bring to a boil; cook and stir for 2 minutes or until thickened. , Reduce heat; stir in American cheese until melted. Stir in cottage cheese and sour cream. Pour over macaroni. Sprinkle with cheddar cheese. Melt remaining butter and toss with bread crumbs; sprinkle over top. , Bake, uncovered, at 350° for 30 minutes or until golden brown.
