Steps:

  • Preheat oven to 375 degrees F.
  • In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.

Cornish Game Hens with Garlic and Rosemary image

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Rub hens with 1 tablespoon of the olive oil. Lightly season hens with salt and pepper. Place 1 lemon wedge and 1 sprig rosemary in cavity of each hen. Arrange in a large, heavy roasting pan, and arrange garlic cloves around hens. Roast in preheated oven for 25 minutes.
  • Reduce oven temperature to 350 degrees F (175 degrees C). In a mixing bowl, whisk together wine, chicken broth, and remaining 2 tablespoons of oil; pour over hens. Continue roasting about 25 minutes longer, or until hens are golden brown and juices run clear. Baste with pan juices every 10 minutes.
  • Transfer hens to a platter, pouring any cavity juices into the roasting pan. Tent hens with aluminum foil to keep warm. Transfer pan juices and garlic cloves to a medium saucepan and boil until liquids reduce to a sauce consistency, about 6 minutes. Cut hens in half lengthwise and arrange on plates. Spoon sauce and garlic around hens. Garnish with rosemary sprigs, and serve.

Steps:

  • Preheat the oven to 400 degrees.
  • Rinse and dry the hens.
  • In the bowl of a mini food processor, add the mustard, wine, rosemary, thyme, oil, salt and pepper.
  • Pulse until all is a smooth paste. It will be more of a liquid form than a paste.
  • Place the hens in a little roasting pan and shmear the mixture all over the birds, under the skin, around the breasts, and into the cavity.
  • Roast, breast side down for 25 minutes then flip and roast for another 25-35 minutes, or until done.
  • Remove from the oven and let rest at least 10 minutes.
  • Cut each hen in half, down the breastbone, and serve with some sauce on top.

Steps:

  • Wash cornish game hens and pat dry inside and out. Season with fresh ground black pepper to taste.
  • Pre-heat oven to 500 degrees. Lower immediately to 350 to start roasting. Roast until internal meat in the center of breast meat is at least 160 degrees.
  • Remove from oven and allow to rest for 10 minutes - tented with foil to preserve heat.
  • Sauce:.
  • In a skillet, melt butter on low to medium heat. Add chopped shallots and simmer until lightly colored. Don't allow to burn. Add flour by slowly whisking it in until the combination is smooth and unclumped.
  • Slowly whisk in Wine and Chicken stock and simmer.
  • Add sliced Portobello mushrooms and sliced Pear to sauce.
  • Add a few sprigs of fresh dill.
  • Allow the sauce to simmer until it thickens to your preference. Salt and pepper to taste.
  • Sauce should have a slightly peppery and lightly sweet taste.
  • Serve Cornish Hens and Pour sauce with mushrooms and pear over cornish hens. Add enough sauce that the cornish hens swim lightly in it.
  • Use one sprig of fresh Dill as garnish.
  • Goes well with fresh small Brussel Sprouts.

Steps:

  • Thaw hen, if frozen. Rinse hen with cold water and pat dry. For stuffing, in a small saucepan combine water and margarine or butter; cook until margarine melts. Remove from heat. Stir in croutons, fruit bits, onion, and bouillon granules.
  • Spoon stuffing into body cavity. Combine mayonnaise and poultry seasoning; coat hen with mayonnaise mixture.

  • Preheat oven to 500°F. Sprinkle hen halves with thyme, salt and pepper. Heat oil in heavy large skillet over medium-high heat. Add hen halves, skin side down, and cook until brown, about 6 minutes per side. Transfer hen halves to baking sheet (do not clean skillet). Roast Cornish Hens With Rosemary, Potatoes, Lemons & Wine image

Steps:

  • Preheat the oven to 400 degrees F. Brush the chicken or game hens liberally with some of the olive oil and season with salt and pepper inside and out. Sprinkle with paprika.
  • Place the lemon quarters in the cavity, giving each (lemon) a little squeeze to release the oil from the skins.
  • Season the potatoes with salt and pepper and toss them with the rest of the olive oil and the rosemary leaves. Spread them around the chicken in a large baking pan.
  • Fold a piece of aluminum foil double into a rectangle about the size of the chicken. Grease it down the middle, making a little tent, and lay the foil loosely over the breast.
  • Roast the chicken for 45 minutes, basting 2 to 3 times with the fat in the pan.
  • Add the wine (it will quickly evaporate in the hot oven, leaving a lovely flavor in the potatoes), remove the foil, and cook for 15 to 20 more minutes.
  • If the breast is not browned enough, turn on the broiler for a few seconds to crisp the skin, but watch carefully so as not to burn your masterpiece.
  • Carve the large chicken or split the game hens and serve with the potatoes and the pan juices poured over the chicken.
