ROASTED CORNISH GAME HENS

- Preheat oven to 375 degrees F.
- In a small mixing bowl, stir together salt, lemon pepper, dried basil and poultry seasoning. Rub olive oil all over the hens and season each with the salt mixture. Place the hens on a baking sheet pan with plenty of space between them. You may need to use 2 pans. Loosely stuff the cavities of each hen with some green bell pepper, celery and onion. Roast the hens in the preheated oven for about 1 hour or until an instant-read thermometer inserted into the thickest part of the thigh registers 165 degrees F and the juices run clear. Remove the hens from the oven, loosely tent with foil and let rest 10 minutes before carving or serving.
ROAST CORNISH GAME HENS WITH CALVADOS SAUCE
Steps:
- Preheat oven to 375 degrees. Heat 4 tablespoons oil in heavy large skillet over high heat. Sprinkle game hens lightly with salt and pepper. Add 3 hen halves to skillet and cook until brown, about 5 minutes per side. Transfer hens to heavy 18x12x1-inch baking sheet. Repeat with remaining hens. Add shallots to same skillet; saute over high heat until golden brown, about 4 minutes. Using slotted spoon, transfer shallots to baking sheet, arranging around hens. Add remaining 1 tablespoon oil to skillet. Add apples and saute over high heat until golden, about 5 minutes. Transfer apples to baking sheet, arranging around hens. Set skillet aside; do not clean. Transfer baking sheet to oven and roast hens until cooked through, about 40 minutes. Meanwhile, add broth and 1/2 cup Calvados to reserved skillet and bring to boil (mixture may ignite). Boil until reduced to 1 1/4 cups, stirring occasionally, about 15 minutes. Set sauce aside. Transfer hens, apples, and shallots to platter. Tent with foil. Pour juices from baking sheet into broth mixture, scraping in any browned bits. Add cream, apple juice mixture, cayenne, and 1/2 cup Calvados; simmer until reduced to sauce consistency, stirring occasionally, about 8 minutes. Serve hens, apples, and shallots; pass sauce separately.
CORNISH GAME HENS WITH ORANGE SAUCE
Cornish games with orange sauce is an elegant, but easy recipe. It is perfect for dinner parties as it allows the cook ample time to enjoy guests while preparing. Served with buttered broccoli or asparagus and sautéed onions/red pepper it is visually appealing as well.

Steps:
- Preheat oven to 500°F.
- Prepare hens by rubbing mixture of salt and pepper into skin liberally.
- Place on cookie sheet, breast side up.
- Roast for 15 minutes at 500°F.
- Remove from oven and turn breast down; pour 1 1/2 cups water over hens.
- Turn oven down to 425°F and continue to cook for 1/2 hour.
- Meanwhile, use a zester to obtain orange peel without cutting into pith of fruit.
- Slice oranges in half and squeeze juice.
- Place juice in saucepan with zest and heat thoroughly (do not boil).
- Remove hens from oven and turn breast-side up and continue cooking for additional 1/2 hour (total cooking time is 1 hour 15 minutes).
- Blend cornstarch with orange juice/zest mixture and heat to thicken, stirring constantly.
- To serve: Place hen on plate and pour sauce over. Sprinkle with additional orange zest and parsley.
ROAST CORNISH GAME HENS WITH ORANGE-TERIYAKI SAUCE

- Whisk first 5 ingredients in bowl to blend for marinade. Place hens in plastic bag. Add 1 cup marinade; seal bag. Let hens marinate 1 hour at room temperature or refrigerate up to 3 hours, turning bag occasionally. Reserve remaining marinade.
- Preheat oven to 400°F. Place rack on large rimmed baking sheet. Arrange hens on rack; drizzle with marinade from bag. Roast hens until cooked through and brown, basting occasionally with reserved marinade from bowl, about 1 hour.
- Transfer hens to platter. Scrape juices into pan; add broth and any remaining marinade. Bring sauce to boil. Season with salt and pepper; spoon over hens.
ROASTED CORNISH GAME HENS WITH SESAME-GINGER SAUCE
This is a recipe I found in a magazine a few years back and it never disappoints! I usually use this for dinner parties because it can be prepared ahead of time and takes very little effort. This calls for Cornish Game Hens but I always use mixed pieces of chicken with the skin on! Just watch because the chicken breasts cook faster than the dark meat. I never alter the ingredients but I do marinate it for at least 4 hours or longer. I serve this with garlic-mashed potatoes and broccoli!! Oh- don't forget the last step with the reserve marinade! Enjoy!!

- Whisk first 5 ingredients in a medium bowl. Transfer half of marinade to small saucepan; reserve. Pour remaining marinade into 15x10x2-inch glass pyrex dish. Add hens; turn to coat. Marinate 30 minutes to 4 hours in the refrigerator, turning occasionally.
- Preheat the oven to 425°F Arrange hens, skin side up, on large brimmed baking sheet. Sprinkle with Sesame seeds. Roast until cooked through and brown, about 40 minutes. Transfer to platter. Pour pan juices into saucepan with reserved marinade. Bring to boil, stirring often. Simmer until sauce coats spoon, about 5 minutes; pour into bowl. Serve hens with sauce.

- In a large deep skillet, melt the butter in the olive oil. Season the hen pieces with salt and pepper and add half of them to the skillet. Cook over moderately high heat, turning, until browned all over, about 8 minutes; transfer to a plate. Repeat with the remaining hen pieces.
- Add the shallots to the skillet and cook over moderate heat until softened, about 3 minutes. Add the cider, stock, Calvados and vinegar and simmer over moderately high heat, scraping up any browned bits from the bottom of the pan, until slightly reduced, about 5 minutes. Add the apples and heavy cream and bring to a simmer. Return the hens to the skillet and simmer over moderately low heat until an instant-read thermometer inserted into the thickest piece registers 160°, about 10 minutes. Transfer the hens to a platter. Add the currants to the skillet and season the sauce with salt and pepper. Spoon the sauce over the hens and serve.
