PEANUT BUTTER SAUCE CHICKEN
An invention of mine to make use of some leftover chicken breasts. Its ingredients mainly belong to the Far-Eastern cuisine, but it also has a slight Latin twist and a Lebanese hint! ENJOY

Steps:
- Heat the sesame oil in a skillet over medium heat. Stir in the garlic and salt. Cook and stir 1 minute, then stir in the pine nuts, and cook until golden, about 5 minutes. Add the diced chicken breast, and cook a few minutes to reheat. Stir in the peanut butter, soy sauce, and jalapeno pepper until the peanut butter has melted. Pour in the water, and bring to a simmer. Cook and stir until the sauce has thickened, about 5 minutes more.

PEANUT BUTTER BARBECUE SAUCE/MARINADE
This came from my friend Jolene. of course, I "HAD" to change it a bit, I can't help myself. It's a bit much for most Fish but it goes well with almost alything else especially Chicken and Turkey. Come to think of it maybe you'll like it with Fish. Give it a try.

Steps:
- Combine all ingredients in a blender, puree.
- Place in a small sauce pan.
- Bring to a slow boil, reduce heat and simmer 9-10 min.
- Cool to room temperature.

BBQ PEANUT BUTTER CHICKEN
I found this on the cap of a peanut butter jar. Sounds like it would be good. Prep time is marinade time.

Steps:
- Prepare the marinade 2 hours before your ready to grill.
- Mix all the ingredients except chicken in blender until well mixed. If too thick, you can add up to 1 cup of water to thin out.
- Marinate the chicken for 2 hours.
- Lightly oil a medium hot BBQ grill and place the chicken on the grill for 6-8 minutes.

- Cut the chicken thighs into bite-sized pieces and put them into a large bowl. Add the coco aminos or soy sauce and mix. Let the chicken marinate while you chop the onion and make the sauce.
- Heat the oil in a large, non-stick pan over medium-high heat. Pour the chicken and soy sauce into the pan (careful, it will splatter) and move the chicken around so that it is in a single layer. Let it cook undisturbed for 5 minutes then turn the chicken pieces over and let them cook for another 5 minutes.
- Add the onion to the pan and let it cook for 3 minutes, or until it is transparent. Add the garlic and ginger and cook for 1 more minute.

- Warm oil in a large skillet over medium-high heat. Season chicken with salt and pepper and add to skillet in a single layer (work in batches if necessary). Cook, turning frequently, until golden brown, about 5 minutes. Remove to a slow cooker. Repeat with remaining chicken.
- Pour off all but 1 Tbsp. fat from skillet. Add onion and cook, stirring frequently, until softened, about 3 minutes. Add garlic; sauté 1 minute longer. Add barbecue sauce and peanut butter. Stir, scraping up browned bits on the bottom of the pan, until slightly thickened, about 2 minutes. Pour sauce over chicken and stir to coat.
- Cover and cook until chicken is cooked through, 2 1/2 to 3 1/2 hours on low. Uncover, set temperature to high and cook, turning chicken frequently, until sauce thickens, about 20 minutes. Serve.
