- Roast vegetables in oven until charred. Wash peppers and tomatoes, drain then arrange on a baking tray (single layer). Bake until charred, turning vegetables and charring all sides. Remove from the oven, cover with a clean teatowel and cool to handle. Remove skins and seeds from vegetables. Pull capsicums apart, into 3-4 pieces. Cut tomatoes in half. Discard skins and seeds. Rinse and drain. Finely chop (we used a food processor). Prepare jars. Cover jars with water and bring to a boil, boiling for 10 minutes while you reduce the relish. Once the time is up, turn the heat off and leave jars in canner until ready to fill with hot relish. Reduce relish. Combine the diced vegetables, sugar, salt and onion in a large pan (or several). Bring to a boil then simmer until thickened to your liking, about 15-20 minutes. Prepare lids. While you are simmering the relish, place the lids into a bowl of boiled water. Remove the lids from the water when you are ready to place them onto the jars to seal. Ladle hot relish into hot jars. Immediately spoon the hot relish into hot jars, leaving a 1/4 inch (0.5cm) headspace. Remove bubbles, check headspace is correct, then wipe rims and seal. Process jars in a boiling water canner for 10 minutes. Process jars of relish in boiling water bath canner for 10 minutes (start timer once water returns to a full boil). When time is up, turn heat off and rest jars in water for 5 minutes before placing onto a towel-covered bench overnight to cool. Next day: check for seals. Check jars have sealed before labelling and storing in a cool, dry and dark place for up to 12 months. Jar lids should not flex up or down when pressed. TIPS: Add some heat to your relish by substituting some of the sweet red peppers for chillies; Try cherry tomatoes instead of normal garden tomatoes; Add oregano instead of basil (or half basil, half oregano), or leave out if you prefer; Puree the relish before canning for a smooth pasta sauce alternative.

- Make the relish: Preheat the oven to 350 degrees F. Spread the walnuts on a baking sheet and bake until toasted, 7 to 10 minutes. Let cool, then finely chop and transfer to a bowl. Add the cayenne, lemon juice, honey, roasted red pepper, walnut oil, 1 tablespoon olive oil and 2 tablespoons parsley. Add 1/2 teaspoon salt and black pepper to taste and toss to combine. (The relish can be made up to 1 day ahead; cover and refrigerate.)
- Make the salmon: Raise the oven temperature to 425 degrees F. Combine the remaining 1 tablespoon olive oil and 2 tablespoons parsley, the chives, lemon zest, 1/2 teaspoon salt, and black pepper to taste in a bowl. Rub the herb mixture all over the salmon. Lay skin-side down in a baking dish and roast until just cooked through, 12 to 14 minutes. Let rest 5 minutes, then transfer to a platter and top with the walnut-pepper relish.

- Heat oil in heavy large skillet over medium-high heat. Add red peppers and sauté 2 minutes. Add onions and garlic. Cook until onions are tender, stirring frequently, about 5 minutes.
- Mix vinegar and sugar in small bowl until sugar dissolves. Stir vinegar mixture into red peppers. Mix in mustard and cayenne pepper. Season with salt. Continue cooking relish until all liquid has evaporated, stirring frequently, about 6 minutes. Cool to room temperature. (Can be prepared 1 day ahead. Cover and refrigerate. Bring to room temperature before using.)

- Prepare a hot charcoal grill or preheat gas grill to high. Cover and preheat grill grate for 5 minutes.
- Lightly butter each ear of corn, then season with salt and pepper. Wrap each ear in aluminum foil.
- Clean and oil the grill grate. Place the corn, red pepper, and jalapeno on the grill and cover. Grill red pepper and jalapeno until they start to blister, but not blacken, on each side. Grill corn until it's lightly charred all over. Remove pepper, jalapeno, and corn to a cutting board as they are done.
- Brush green onions lightly with oil and place on the grill. Cook until softened and lightly browned on both sides. Remove to cutting board.
- In a medium bowl, cut kernels off each ear of corn. Remove seeds and ribs from jalapeno and red pepper, then dice and add to bowl with corn. Thinly slice green onions and add to corn and peppers along with cilantro, lime juice, lime zest, sugar, chili powder, and cumin. Stir to combine. Season with salt and pepper to taste. Serve immediately or store in an airtight container in the refrigerator.

This is the relish recipe I remember from my childhood. Light green in color, and unbelievably good on hot dogs, you won't be disappointed. It's an easy recipe for beginners, even if you have never canned a thing in your life.

- Grate the cucumbers and onions into a large bowl using the large holes of a box grater. Sprinkle the pickling salt over the top. Cover tightly, and allow to rest at room temperature overnight.
- Squeeze as much liquid as possible out of the cucumber mixture; set aside. Whisk together the sugar, flour, turmeric, ginger, and celery seed. Heat the vinegar and water in a large, heavy pot over medium-high heat. Whisk in the sugar mixture until smooth. Stir in the cucumber mixture. Bring to a boil and cook, stirring frequently, until thickened, about 15 minutes.
- Sterilize the jars and lids in boiling water for at least 5 minutes. Pack the relish into the hot, sterilized jars, filling the jars to within 1/4 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
- Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil over high heat, then carefully lower the jars into the pot using a holder. Leave a 2 inch space between the jars. Pour in more boiling water if necessary until the water level is at least 1 inch above the tops of the jars. Bring the water to a full boil, cover the pot, and process pint jars for 10 minutes.
- Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Store in a cool, dark area.

- Heat oven to 450°F
- Prick bell peppers in several places with fork.
- Place on baking sheet or in shallow roasting pan.
- Roast peppers 30 minutes or until skin is blackened, turning occasionally.
- Transfer peppers to paper bag; close bag. Let stand 10 minutes.
- Meanwhile, combine green and red tomatoes and onion in medium bowl.
- Stir in oil, vinegar, cilantro, and salt.
- Remove peppers from bag; peel off and discard skin.
- Cut peppers into 1/2 inch pieces; discard seeds.

- To a small saucepan, add the olive oil over medium low heat. Add the whole garlic clove and cook until it is evenly brown. Remove the garlic from the oil, keep 1 tablespoon of the oil. Save the rest for salad dressing.
