BUTTERED ROSEMARY ROLLS

Buttered Rosemary Rolls image

Steps:

  • Place the dinner rolls in a large lightly buttered skillet, allowing some space between the rolls. Cover with a dish towel or cloth napkin and set aside in a warm place to rise for at least 2 to 3 hours.
  • When risen, the rolls should be poufy and soft. Brush melted butter onto the rolls. Then sprinkle the rolls with chopped rosemary. Finally, sprinkle with sea salt.
  • Bake (as instructions on the packet - usually 400 degrees F) for 15 to 20 minutes. Don't be alarmed if you pull them out of the oven and they've risen way over the surface of the pan. Within a minute or two, they'll calm right down.
  • Then you can dig right in!

15 frozen, unbaked, un-risen dinner rolls

Coarsely chopped fresh rosemary
Coarse sea salt

Rosemary Brie No-Knead Rolls image

Steps:

  • In 3-quart saucepan, stir milk, sugar and olive oil together. Heat to simmering over medium heat, stirring occasionally. Remove from heat; cool slightly to between 90°F and 110°F (warm).
  • Add 2 cups of the flour and the yeast. Stir until blended. Cover; let rise about 1 hour or until doubled. Stir in remaining 2 1/2 cups flour, the baking powder, baking soda, rosemary and salt.
  • Heat oven to 400°F. Spray 18 regular-size muffin cups with cooking spray.
  • Shape dough into 54 (1-inch) balls. Place 3 balls in each muffin cup. Push 1 slice of Brie into center of each filled muffin cup, tucking most of it under dough balls.
  • Bake 16 to 20 minutes or until golden brown on top. Use spoon or knife to push any cheese that has overflowed onto the muffin pan back on top of rolls. Cool 10 minutes. Remove from pan to cooling rack.

No-Knead Bran Rolls image

Steps:

  • In large bowl, mix 1 3/4 cups of the flour, the cereal, brown sugar, salt and yeast. Add water, shortening and egg. Beat with electric mixer on low speed 1 minute, scraping bowl frequently. Beat on medium speed 1 minute, scraping bowl frequently.
  • Stir in enough remaining flour to make dough easy to handle. Grease large bowl with shortening or cooking spray. Place dough in bowl, turning dough to grease all sides. Cover; let rise in warm place about 1 hour 30 minutes or until dough has doubled in size.
  • Grease 2 (9-inch) round pans with shortening or cooking spray. Gently push fist into dough to deflate; divide into 24 equal pieces. With greased hands, shape each piece into a ball (dough will be slightly sticky). Place 12 balls in each pan. Cover; let rise in warm place about 45 minutes or until dough has doubled in size.
  • Heat oven to 375°F. Bake 20 to 25 minutes or until golden brown. Serve warm or cool.
