Steps:

  • Trim roots and stems from radishes. Wash and put in pan; cover with water and add 1/4 t. salt. Bring to a boil, and cook just until the radishes begin to lose color, about 2 minutes. Drain and let cool. Make a marinade of remaining ingredients. Place radishes in a jar with a tight lid; pour marinade over them, seal with lid, and turn upside down a few times. Let stand at least overnight. Radishes keep well and increase in flavor if stored in refrigerator. Turn upside down occasionally to blend flavors. To serve, drain and place in bowl.

2 bunches radishes
1/4 t salt
1/3 C wine vinegar
1/4 C olive oil
1/4 C cold water
3/4 t salt
1/4 t pepper

Simple roast radishes image

Steps:

  • Heat oven to 180C/160C fan/gas 4. Remove the leaves from the radishes and if they are nice and fresh, set aside. Halve the radishes and tip into a roasting tin with the olive oil.
  • Roast for 20 mins until shrivelled and softened, then remove from the oven. Season with salt, toss with some of the leaves to wilt and serve.

Steps:

  • Heat the oven to 200C/180C fan/ gas 6. Tip the radishes and bashed garlic cloves into a roasting tin, season well and drizzle with the oil. Toss to coat the radishes and garlic.
  • Roast for 30-40 mins, or until the radishes are tender. Squeeze the garlic from its skins, then stir gently and serve.

This relish is great on so many things. It really makes everyone talk at the community picnic and family reunion. This relish has a nice rosy color to it. You can make it with all sorts of radishes. I used my spring radishes. We eat this on virtually everything but its really good on brawts, hot dogs, hamburgers, bbq chicken, and so much more.

Steps:

  • Put radishes, celery and onion through the coarse blade of a grinder, or chop them finely. Mix remaining ingredients and allow to stand for three hours.
  • Bring to a boil in large pan and cook 10 minutes.
  • Pour into hot jars, leaving 1/2 inch head space. Adjust lids and process 1/2 pints or pints in a boiling water bath for 20 minutes.

1 tablespoon mustard seeds
1 cup vinegar
2 tablespoons prepared horseradish
