  • Preheat the grill to medium-high. Brush the chickens with oil and season the outside and cavities with salt and pepper. Skewer the chickens onto the rotisserie rod and grill, on the rotisserie, for 30 to 35 minutes, or until the chicken is golden brown and just cooked through. Remove from grill and let rest for 10 minutes before serving.

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook bow tie pasta at a boil, stirring occasionally, until tender yet firm to the bite, about 12 minutes. Drain and keep warm in the pot.
  • Heat olive oil in a skillet over medium heat. Cook and stir shallot and garlic until fragrant and shallot has softened, 2 to 3 minutes. Pour in white wine and cook until reduced, about 5 minutes. Add Gorgonzola cheese and chicken stock; continue to cook until creamy, 5 to 7 minutes. Season sauce with salt and pepper.

Bow Tie Pasta Salad with Chicken and Roasted Peppers image

Steps:

  • 1. Position a rack about 6-inches from broiler and heat to high. Bring a medium-large pot of salted water to a boil. Add the pasta and cook, stirring often, until al dente, about 10 minutes. Drain well and rinse under cold running water. Spread out on paper towel to absorb excess moisture.
  • 2. Meanwhile, put the tomatoes in a small bowl and stir in 1 tablespoon vinegar, 1 tablespoon olive oil, and 1/4 teaspoon salt. Set aside to macerate for 15 to 20 minutes.
  • 3. Arrange the peppers on a broiling pan, cut side down and broil, until blistered and black in spots, 5 to 7 minutes. Transfer peppers to a bowl, cover with a lid or plate and set aside to steam for 10 to 15 minutes. Rinse or scrape off the skin; cut peppers into a dice.
  • 4. Mix the remaining 1 tablespoon vinegar, mustard in a large bowl, season with 1/2 teaspoon salt and some pepper. Whisk in the remaining 2 tablespoons olive oil until smooth. This makes the perfect amount of cheesy sauce. This is not a recipe for the diet conscious. A lighter version can be made by substituting fat free cream of mushroom soup, 2% Velveta, neufchatel, and low fat cheddar cheese. To save even more time, you can also use rotisserie chicken in place of the chicken breasts. We serve this dish with crusty French bread and either steamed asparagus or broccoli.

Steps:

  • 350 degree oven.
  • Bring 3 quarts salted water to a rapid boil. Add the pasta and boil for 10 minutes or until al dente. Drain the pasta.
  • While the pasta is cooking, in a saute pan, melt the butter and canola oil. Do not let the butter brown. Cook the chicken pieces until slightly done. Do not brown. Add 1 cup chicken broth, celery, and onion at this point and continue cooking until the chicken is tender and done. Add the soup, cheeses, pepper flakes, and if needed, the remaining chicken broth, stirring until the cheeses are melted. Toss the pasta into the cheese mixture; pour into a buttered casserole dish.
