ROUND 2 RECIPE - THREE LAYER BEAN DIP

Round 2 Recipe - Three Layer Bean Dip image

Steps:

  • Preheat the oven to 350 degrees F. Spread the pita wedges on a baking sheet. Toast in the oven until crispy, about 10 minutes. Let cool completely In a small bowl, combine the cream cheese and lemon zest and mix until smooth. Spread the cream cheese mixture into the bottom of a medium dip bowl. In the bowl of a food processor, combine the red beans, reserved dressing and a generous pinch of salt and pepper, and puree until smooth. If the mixture is too thick, then add a few tablespoons of water to thin. Spread the bean puree over the cream cheese mixture. Combine the reserved Tuscan Beans with the red onions and spoon on top of the pureed beans. Serve with toasted pita chips on the side.
  • Preheat a grill over medium heat. Place the sausages on the grill and cook for 20 to 25 minutes, turning every 4 to 5 minutes. In a large bowl, whisk together the olive oil, red wine vinegar, garlic, Italian seasoning, reserved juice from the can of tomatoes and season with salt and pepper. Reserve 3 tablespoons of the dressing for the Round 2 Recipe Three Layer Bean Dip. Add the beans diced tomatoes, basil and toss to coat. Reserve 1 cup of the bean mixture for the Round 2 Recipe Three Layer Bean Dip. Serve the remaining beans with the grilled sausage.

3 pita pockets, each cut into 8 wedges
One 8-ounce package cream cheese, softened
Zest of 1/2 a lemon
One 15-ounce can red beans, rinsed and drained
3 tablespoons dressing, reserved from Grilled Sausage with Tuscan Beans, recipe follows
Salt and fresh ground pepper
1 cup Tuscan Beans, reserved from Grilled Sausage with Tuscan Beans, recipe follows
1/2 medium red onion, diced
1 pound hot Italian sausage or one 6-count package
1/4 cup olive oil
2 tablespoons red wine vinegar
1 teaspoon chopped garlic
1 teaspoon Italian seasoning
One 14.5-ounce can diced tomatoes, drained and juice reserved
Salt and freshly ground pepper
Salt and freshly ground pepper
One 15-ounce can cannellini beans, drained and rinsed well
One 15-ounce can red beans, drained and rinsed well
2 tablespoons torn fresh basil

CHEESY BEAN CHALUPA

This dish is also delicious with seasoned ground meat or leftover chicken or turkey-just add chunks or slices on top of the bean layer before baking.

Cheesy Bean Chalupa image

Steps:

  • When you are ready to assemble the chalupas, preheat oven to 350 degrees F.
  • Lightly spray cookie sheets with nonstick cooking spray.
  • Place the tortillas in a single layer. Bake tortillas for 20 minutes until crispy and golden brown. (Do not turn over.)
  • While the tortillas are baking, place the olive oil, lime juice, chili powder and Dijon mustard in a bowl and whisk until blended.
  • Add the lettuce, radishes, cilantro leaves, basil and scallions to the above ingredients. Toss to combine.
  • Season with salt and pepper to taste and toss again.
  • Keeping the just-baked tortillas on the cookie sheet, spread 1/4 cup of the White Bean Dip on each tortilla and sprinkle with 2 Tablespoons of shredded cheddar cheese.
  • Heat in oven at 350 degrees F until cheese is melted-about 5 minutes.
  • Top each tortilla with salad mix, avocado salsa, sour cream and remaining cheese. If you have extra tortillas, cut them into quarters and bake them to use as garnish.

Steps:

  • In a skillet over medium heat, brown meat. Add taco seasoning, salsa, and jalapeno juice. Add a little water if mixture is too dry. Reduce heat to low and simmer for 10 minutes.
  • In another skillet, heat Canola over medium-high heat. Fry flour tortilla shells flat until crispy on both sides. Place tortillas on a flat plate. Cover in meat, then cover meat with cheese, and melt cheese under broiler, about 2 minutes. Remove plate and cover cheese with shredded lettuce, then tomatoes, and olives. Place dollops of guacamole and sour cream in center.

1 pound ground beef

BEAN AND CHEESE TAMALES

Bean and Cheese Tamales image

Steps:

  • Put the oil into a small skillet over medium heat. Add the onions and cook until softened, about 5 minutes. Add the garlic and cook for another 30 seconds. Remove half and reserve it for the tamale dough.
  • To the pan with the remaining onions add the beans, hot sauce, chili powder and season with salt and pepper, to taste. Stir to combine and cook until heated through, about 5 minutes. Set aside to cool slightly. (Reserve 1 cup for the Round 2 Recipe, Bean and Cheese Chalupas.)
  • In a large bowl combine the cornmeal, 1 teaspoon of salt and the baking powder. Cut the butter into the cornmeal using a fork or a pastry blender. Add the broth, a little at a time, until the dough comes together. Mix in the reserved cooked onions and garlic
  • Cut parchment paper into 8 (8 by 8-inch) squares. Spread 1/3 cup of the tamale dough onto the center of the paper and lightly press it into a circle. Put a heaping tablespoon of the beans on top with a tablespoon of cheese. Bring the 2 corners of the paper at the ends of the rectangle up to encase the beans and cheese with the tamale dough. Fold the corners together a couple of times. Fold the other sides over to cover the seam and turn right side up. Continue this process with the remaining dough and filling.
  • Put a steamer basket into a large pot and add enough water to come just below the basket. Cover the pot and put it over medium-low heat to bring the water to a simmer. Put the tamales in the steamer basket. Cover and steam the tamales until the dough is cooked through, about 1 hour, Check after 30 minutes, you may need to add more water to the pot. Remove the tamales from paper wrapping and serve warm.

Beef and Bean Round-Up image

Steps:

  • In skillet, brown the ground beef, onions and green pepper; drain if needed.
  • Stir in barbecue sauce, brown sugar and beans; heat until bubbly.
  • Pour mixture into a 2 1/2 quart casserole dish.
  • Separate biscuit dough into the 10 pieces and cut each piece in half, forming half-circles.
  • Place biscuits, spoke-fashion, over hot meat mixture around edge of casserole.
  • Bake at 375 degrees for about 20 minutes (watch so the biscuits don't burn too quickly).
  • After 20 minutes, sprinkle the cheese over the biscuits and bake for about 5 more minutes or until cheese is melted and biscuits are golden brown.

  • Place beans and enough water to cover in a 3-qt. saucepan. Bring to a boil; boil for 2 minutes. Remove from the heat; let stand for 1 hour. Drain beans and discard liquid. , In a 3-qt. slow cooker, combine the 3-1/2 cups water, onion, chilies, garlic, chili powder, salt, cumin and oregano. Add roast and beans. Cover and cook on high for 2 hours. Reduce heat to low and cook 6 hours longer or until pork is very tender. , Remove roast and shred with a fork. Drain beans, reserving cooking liquid in a saucepan. Combine beans and meat; set aside. Skim and discard fat from cooking liquid; bring to a boil. Boil, uncovered, for 15-20 minutes or until reduced to 1-1/2 cups. Add meat and bean mixture; heat through. , To serve, spoon meat mixture over corn chips; top with green onions, lettuce, cheese, tomatoes and salsa.
