OVEN-POACHED PEARS WITH RED WINE

Oven-Poached Pears With Red Wine image

Steps:

  • Combine the wine, water, sugar, cinnamon stick, cloves and lemon slices in a saucepan. Bring to a boil and simmer, uncovered, until the mixture is reduced to approximately 4 cups liquid. Set aside until ready to use.
  • Preheat the oven to 350 degrees. Peel the pears but leave the stems on. Place the pears upright in a baking dish just large enough to hold them comfortably. Bring the wine mixture to a boil again and pour it over the pears (it will not cover them completely). Bake for 1 hour, basting every 15 minutes. The pears should darken to a rich mahogany color as they cook.
  • When the pears are done (still firm but easily pierced with a fork), remove them from the oven. The liquid in the baking dish should be syr-upy. If it is not, transfer it to a saucepan and cook on the stove over a high heat until there are approximately 2 cups of syrup.
  • Place the pears in compote or similar dishes and cover with syrup. The pears may be served with a ricotta cream sauce (see following recipe).

Steps:

  • Combine the flour, salt,sugar and turmeric in a bowl.
  • Add the butter and shortening and cut in until mixture resembles coarse crumbs.
  • Mix the vinegar and cold water and add, one tablespoon at a time, to the flour mixture, stirring with a fork until just combined. Wrap in plastic and chill 1 hour.
  • Preheat oven to 350 F, ideally with a baking stone.
  • Use a melon baller to scoop out the pear seeds, leaving a small hole.
  • With a paring knife, carefully notch out the stem.
  • In a small dish mix the granola and butter. Place evenly into the cavity of each pear half and set aside.
  • Melt the jam and honey together, set aside.
  • Roll out ⅔ of the pastry on a floured surface to ¼" thick and divide into 4 pieces, each just large enough for a pear half.
  • Flip the pear halves onto each pastry square and brush with jam mixture.
  • Roll out the remaining pastry to ⅛"-¼" thick and cut into strips.
  • Form strips into a lattice over each pear, pressing to seal at the bottom.
  • Use a knife to trim around the pears, and form stems and leaves with the excess crust.
  • Bake until pie crust is golden and juice is bubbling out from pears, about 20 minutes if your pear is very ripe, up to 40 with firm pears.

Stove Top Roasted Pears with Dulce de Leche image

Steps:

  • In a cast iron skillet large enough to hold the pear halves, add the butter and molasses and begin to "melt" it over low heat. Meanwhile, put the pears on a flat surface, peel and halve them lengthwise. Use a small spoon to scoop out the center part of each half that contains the seeds and tough, fibrous flesh. Sprinkle the pears with lemon juice.
  • When the butter and molasses are melted, add the pears and cook for 2 minutes and then flip. Add about 1 cup of cider to the pan and allow the pears to simmer until they start to become tender, 10 to 15 minutes. Add more cider as needed to prevent them from burning. Cooking times will vary somewhat depending on the size of the pears and their ripeness. Smaller or riper pears will cook faster.
  • Add the sugar and the milk to a small saucepan over medium-low heat. Whisk to dissolve the sugar and then simmer, stirring often, until the mixture has reduced by at least half, about 1 hour. The mixture should be thick and slightly caramel in color.
  • Spoon some of the Dulce de Leche on each plate and top with the pears. Sprinkle with salt and garnish with grated chocolate.
  • In a medium, heavy-bottomed saucepan, add the milk and the sugar. Stir thoroughly to blend. Put the pan over medium heat and bring it to a boil. Reduce the heat and simmer gently, stirring from time to time. The milk and sugar will become "thin" and then eventually "simmer' back together and turn a light brown color. Continue to cook, stirring from time to time, until the sauce is golden brown. This whole process takes about 25 to 35 minutes. Transfer to a bowl or jar to cool.
