ITALIAN EASTER PIE

- For the dough: In a medium bowl, whisk together the eggs and water; set aside. In the bowl of a food processor, combine the flour and salt and pulse a couple of times. Add the chilled butter and pulse about 10 times until pea-size pieces remain. Add the egg mixture and pulse 15 to 20 times until a dough ball forms. Place the dough ball on a floured surface and knead until smooth and elastic, about 1 minute. Divide into 2 balls, wrap each ball with plastic wrap and rest in the fridge for at least 1 hour.
- For the filling: While the dough is resting, whisk together the ricotta cheese, salt, some pepper and 6 of the eggs in a medium bowl and set aside. In a 10-inch skillet over medium heat, add the oil and brown the sausage, breaking up the pieces while it's cooking, 5 to 8 minutes. Drain the sausage on a paper towel-lined plate, leaving behind any fat. Add the asparagus and cook until beginning to soften, 4 to 5 minutes. Set aside.
- Preheat the oven to 375 degrees F. Grease a 9-inch cake pan with butter.
- On a well-floured counter, roll out each dough ball into a thin 14-inch circle. Cover one circle with plastic wrap until ready to use. Loosely roll the other dough circle around a rolling pin and unroll over the prepared cake pan, letting the excess hang over the side. Press the dough gently into the sides of the pan so there is no gap between the pan and the dough. Shingle the salami over the bottom of the dough, creating an even layer. Then, add the asparagus in an even layer on top of the salami. Next, add half of the egg mixture and spread it out evenly, then top with the capicola in an even layer. Layer in the sausage and top with the remaining egg mixture, then finally the provolone cheese.
- Whisk the remaining egg with 1 tablespoon water and brush the outside rim of the dough with the egg wash. Add the remaining dough circle to the top of the pie and cut off the excess dough. Press both circles together to create a seal. Brush the remaining egg wash over the entire top and slice a couple slits in the top of the pie. Bake until golden brown, 45 to 55 minutes. Let stand 10 minutes before slicing.

Here's a great salami recipe. You can add spices to make pepperoni too.

- In a large bowl, mix together the ground beef, black pepper, garlic, mustard seed and curing salt until well blended. Divide into 2 or 4 rolls, wrap in aluminum foil, and refrigerate for 24 hours.
- Bring a large pot of water to a boil. Place the wrapped rolls in the water, and simmer for 1 hour over medium to low heat. Remove carefully, and poke holes in the foil to drain. Set aside to cool. Remove foil, and rewrap with new aluminum foil. Refrigerate until fully chilled, about 3 hours. Slice, and use for sandwiches, crackers, salads or just snacking.

IMPOSSIBLY EASY SAUSAGE BREAKFAST PIE

- Heat oven to 400°F. Spray 9-inch glass pie plate with cooking spray.
- In 10-inch skillet, cook sausage, bell pepper and onion over medium heat 8 to 10 minutes, stirring occasionally, until sausage is no longer pink; drain. Mix sausage mixture, potatoes and 1/2 cup of the cheese. Spread in pie plate.
- In medium bowl, stir Bisquick mix, milk, pepper and eggs until blended. Pour into pie plate.
- Bake 30 to 35 minutes or until knife inserted in center comes out clean. Sprinkle with remaining 1/2 cup cheese; bake 1 to 2 minutes longer or just until cheese is melted. Let stand 5 minutes before serving.

SALAMI PIE
When I was little, my mother got this from a friend of hers. It has been a family favorite and is now my kids favorite. It is very quick and easy! It is kind of like a pizza but different. My teenagers love it and always request it!

- 1. Preheat oven to 325 degrees. Unroll crescent rolls and place in a lightly greased 9 x 13 pan to make a bottom crust (press together seams). Then spread the mozzarella chees on top of the crust.
- 2. Next add the salami (I usually do three across until it is covered). Spread the beaten eggs with pepper over the salami (I use a spoon to spread the eggs evenly over it). Sprinkle with parmesan cheese.
- 3. Bake in the 325 degree oven for about 40 - 45 minutes. Cut into squares.
- 4. Enjoy!! I usually serve a salad with this.
EASTER MEAT PIE
This meat pie is a winner every Easter. Stuffed full of ham, salami, and prosciutto, as well as ricotta, Parmesan, and mozzarella cheeses, this pie really satisfies!

- Place ricotta in a large mixing bowl and add eggs one at a time while mixing on low speed. Stir in mozzarella, ham, salami, and prosciutto until all ingredients are well combined. Line two 9 inch pans with pastry. Spoon half of mixture into each pan. Sprinkle half of the Parmesan cheese over each pie, then cover with top pastry. Crimp edges and cut steam vents in tops.
- Bake in preheated oven for 1 hour, until crust is golden brown. Cool on racks.

- Prepare pie shell by pricking bottom and sides well with fork.
- Bake at 400 for 10 minutes.
- Remove from oven; set aside.
- Reduce oven temperature to 350.
- In saucepan combine flour and pepper; blend in milk.
- Cook and stir till thickened and bubbly; remove from heat.
- Stir in cheese till melted.
- Stir in salami, potato, onion and pimiento.
- Turn into pie shell.
- Bake at 350 till center is nearly set, 35 to 40 minutes.
- Let stand 5 minutes.

This is a slight variation of a recipe from my good friend's mom. It's a great appetizer. Serve it hot, cold or room temperature. It also freezes well. Cut into small squares before freezing.

- Preheat oven to 300 degrees.
- Press crescent roll dough into an ungreased 13x9 glass pan.
- Press seams closed.
- In large bowl beat eggs and add pepper.
- Add parmesan cheese.
- Add salami and mozzarella cheese and mix well to combine.
- Spread over crescent roll dough and bake for 35-40 minutes.
- Allow to cool slightly and cut into small squares.

BAKED SALAMI
I found this recipe years ago. My first thought was that it was strange, but decided to keep it anyway. I have made this many times since and it is one of the first appetizers to go! It is simple enough for football parties or nice enough for cocktail parties. Be careful when you slice the salami so that all the slices are on the same side. The salami has a tendency to twist! Serve with crackers.

- Preheat oven to 325 degrees F (165 degrees C). Line a baking dish with aluminum foil.
- Partially slice the salami into 1/4-inch thick slices, making sure the cuts do not go all the way through. Place the salami into the prepared baking dish, and bake for 1 hour. Drain off the grease.
- Mix the barbecue sauce and brown sugar together in a bowl, stirring until the sugar is dissolved. Pour about 2 cups of the sauce over the salami, and retain the rest for basting. Return the salami to the oven and bake for 45 minutes more, basting occasionally with the reserved sauce. Serve on a platter with a knife so guests can cut their own slices.
