WARM SALMON AND POTATO SALAD WITH CREAMY DILL DRESSING

- Preheat the oven to 400 degrees F. Place the salmon on a parchment-lined baking sheet and sprinkle with salt and pepper. Bake until the salmon is cooked through, about 15 minutes. Use a fork to flake the salmon and set it aside.
- At the same time, steam the potatoes in a steamer basket over 2 inches of boiling water until they become fork tender, 13 to 15 minutes. Remove the potatoes and set aside. To the same steamer basket, add the green beans and steam until tender crisp, about 5 minutes. (Check to ensure there is enough water in the bottom pot at all times.)
- In the meantime, whisk the yogurt, Dijon mustard, dill, lemon zest and juice, garlic and some salt and pepper in a small bowl until well combined. Set it aside.
- In a large serving dish, arrange the cooked potatoes and green beans on a bed of arugula. Top with the flaked salmon and capers and then pour on the dressing.
- Serve immediately or store in the refrigerator for 2 to 3 days. (If you're planning on enjoying this the next day, do not add the arugula until just before eating.)

POTATO, TOMATO, CORN AND BASIL SALAD

- Place the potatoes in a large pot of salted water and bring to boil. Cook until just fork tender, about 15 minutes. Fish out the potatoes with a spider or slotted spoon and place them in a bowl of ice cold water to stop them from cooking.
- Shuck the corn and break each ear in half. Cook in the same boiling water for 5 to 7 minutes until tender but not soft. Remove the cooled potatoes to a dish-cloth to drain. Immerse corn in the same ice bath until cool. Cut each potato into quarters and place in a large bowl.
- Remove corn from water and also let drain. Use a chef's knife to cut the kernels off each ear. Add kernels to bowl. Add grape tomatoes, onion, and whole basil leaves. Add olive oil and lemon juice and toss gently to combine. Season, to taste, with salt and pepper. Serve immediately.

- Boil 600g baby new potatoes for 15-20 mins. Cool, then halve. Mix together 6 tbsp olive oil, 1 tbsp Dijon mustard, 2 tbsp white wine vinegar, 1 small finely diced red onion, 1 crushed garlic clove, 2 tbsp capers and 1 pack chives, snipped.
- Mix potatoes and 2 x 213g cans salmon, flaked into bite-size pieces, with handful watercress. Drizzle over dressing.

- Take the salmon out of the fridge for at least 10 minutes, but the more room temperature, the better. Preheat oven to 425 degrees F. Pat salmon completely dry. Heat oven safe pan over medium high heat for a few minutes until hot, but not smoking.
- Season salmon with salt and pepper and brush with olive oil, then immediately put into the pan, skin side up. Sear, untouched, for 4 minutes. The only reason you should touch it is to gently pat the sides if they curl up. They should relax after a good pat-down. Salmon will release easily from the pan when it’s nice and brown.
- Flip and transfer to the oven at 425 degrees, baking for about 8 minutes. Let it rest, covered with foil, until it cools a little bit, about 4 minutes
- Meanwhile use a vegetable peeler to shred carrots and arrange bibb lettuce on a plate. Add sliced cucumbers. Place the cooled salmon on top of the lettuce and add the creamy basil dressing.
