SALSA PERFECTO
A totally delicious salsa recipe that combines fresh ingredients with cooked tomatoes that gives it a fresh but very salsa-y taste. I've finally gotten the ingredients down to exact measurements! I'm required by my [extended] family to keep at least half a gallon in my house at all times. Goes great with cheese dip, on tacos, in soups, whatever! In Paris, I made this all the time, and my friends would literally drink it. Out of wine glasses. Maybe they just missed Mexican food, but I'm thinking it's because the recipe is so good!

Steps:
- Throw garlic, jalapeños, and cilantro in a food process and blend til pretty smooth.
- Toss in onions and blend til pretty smooth again.
- Throw in fresh tomatoes and chop til no big chunks of tomato.
- Transfer mixture to the bowl in which you'll keep it.
- Dump in all canned tomatoes and blend with an immersion blender until desired consistency.
- Mix in salt and refrigerate for an hour. Taste and salt to taste.

THE PERFECT SALSA
My mother-in-law has past this on and I just thought I would share this with all of you. This is a staple in my house as I make it at least once a week.

Steps:
- Bring large pot of salted water to rolling boil add tomatoes, jalapenos, onion ect. (you can add any kind of peppers you like).
- Boil until vegetables get soft and tomatoes start to peel.
- Then drain.
- In blender combine the handful of cilantro and dry ingredient (I usually just eye ball it), then add the vegetables.
- Bend to your liking. The longer you blend the thinner the salsa. And enjoy!
- NOTE: For milder salsa seed the jalapenos before boiling.

- Heat a large cast iron skillet or a heavy-bottomed skillet over high heat. Add the tomatoes and the chiles to the pan and char on all sides, rotating the vegetables occasionally until blackened. This can take about 6 minutes for the chiles and 10 to 15 minutes for the tomatoes. The tomato skins should begin to pull away from the flesh and the chiles will look blistered.
- Transfer the chiles to a cutting board and allow them to cool. Place the tomatoes, including any charred skin that has completely fallen off, in the bowl of a food processor or blender. Pulse a couple of times for about 10 seconds or until the tomatoes are blended but with a few small chunks for texture.
- Transfer the blended tomatoes to a bowl. Cut the charred chiles in half lengthwise and remove the stems and seeds. You can remove the ribs if you don’t like the salsa too spicy. Chop the chiles into small dice.
- Mix the chiles, onions and cilantro with the tomatoes until combined. Stir in the lime juice and salt. Taste and season with additional lime juice and salt, if needed. Cover and refrigerate until cooled. Serve with chips.

- Heat broiler. Place tomatoes cut side down on a foil-lined rimmed baking sheet. Fit onion, chiles, and garlic around tomatoes so everything is snug but not overlapping. Broil, turning onion and chiles once, until lightly charred, about 6 minutes for chiles and garlic and 15–18 minutes for tomatoes and onion.
- Peel garlic and place in a food processor along with half of the tomatoes. Pulse until very smooth. Add remaining tomatoes and pulse until tomatoes are mostly broken up but mixture still has some texture. Transfer to a medium bowl. Finely chop onion and chiles and mix into purée; season with salt. Let cool. Stir in lime juice and cilantro. Season salsa with more salt if needed. Serve with chips.

- Roast those tomatoes! First, you must roast the tomatoes. You have lots of ways to get there. Bake them in the oven at 400F. Toast them on a hot skillet.
- Use ratios, not recipes. It's easier to think in terms of ratios instead of blindly following a recipe. Start by using a 2:1 weight ratio on your Tomatoes VS. Onions for a properly balanced salsa.
- Add capsaicin incrementally. The final and most important key is what I call Capsaicin Control. See, everyone has their own preferred heat level.
