Steps:
- For the loaf: Preheat the oven to 375 degrees F.
- Put the bread in a bowl and add the pineapple juice. Let soak for about 10 minutes.
- In a large pan over medium-high heat, add the olive oil. Add the onion, chopped pineapple, a pinch of salt and a few grinds of black pepper and cook a few minutes without stirring, allowing everything to sit in the pan to create a golden crust. Add the liquid smoke and stir to combine. Set aside until cool enough to handle.
- In a large bowl, add the ground pork, green chiles, adobo spice, egg, soaked bread, a few grinds of black pepper and the pineapple and onion mixture. Mix to combine but don't overmix.
- On a baking sheet lined with parchment paper, free-form a loaf (about 8 inches by 4 inches) from the mixture. Bake, uncovered, until the meatloaf is cooked through and browned, about 50 minutes.
- For the topping: Spoon the salsa verde over the top of the meatloaf and gently tent with aluminum foil for 10 minutes. When ready to serve, top with the onion, cilantro and salsa roja, then slice and serve with a wedge of lime.
SALSA VERDE MEXICAN MEATLOAF
A yummy alternative to traditional meatloaf. I serve this with refried beans and Mexican rice. It's like having a burrito but less messy. You can top with sour cream or guacamole if desired.

- Preheat oven to 350.
- Combine Ground Beef with eggs and a good amount of the Salsa. Start at about ½ a cup and add more as desired. Add green chiles & olives. Add about a teaspoon each of spices or more if desired. Add enough bread crumbs until meat mixture sticks together. Crumble in cheese as desired.
- Grease pan as desired, form loaf in pan. Bake at 350 for 45 mins, and then check for doneness. Depending on your oven and how you shape the loaf this could take another 15-20 minutes.
EASY SALSA MEATLOAF
A crowd pleasing meatloaf, may be made with ground beef or ground turkey. Both are yummy.

- In a large bowl, mix the ground sirloin, salsa, bread crumbs, cheese, egg, and garlic. Season with parsley, salt, and pepper. Transfer to a 5x9 inch loaf pan.
- Bake 45 minutes in the preheated oven, or to a minimum internal temperature of 160 degrees F (72 degrees C).
