SALTED CARAMEL BISCUIT BARS

A healthier take on one of our favourite chocolate bars, these biscuits are packed with wholesome ingredients, and free from refined sugar and dairy

Salted caramel biscuit bars image

Steps:

  • Heat oven to 180C/160C fan/gas 4 and line a large baking tray with baking parchment.
  • For the base, blitz the oats in a food processor until flour-like. Add the remaining ingredients and whizz until the mixture starts to clump together. Scrape into a bowl, then roll and cut into 18 equal-sized rectangular bars, about 9 x 2cm. Place on the prepared tray and use a small palette knife to neaten the tops and sides of each biscuit. Bake for about 10 mins until lightly golden at the edges, then leave to cool.
  • Meanwhile, put all the caramel ingredients in the food processor (no need to rinse it first) and blitz until it forms smooth, shiny clumps. Using a spatula, push the mixture together, then roll into 18 even-sized balls using your hands.
  • Once the biscuits are cool, squash the caramel onto them. Use your fingers to press it into shape and smooth out any bumps, especially around the edges (as they will show underneath the chocolate coating).
  • Melt the chocolate in a heatproof bowl set over a pan of simmering water - make sure the water doesn't touch the bowl (otherwise, it might seize and go grainy). Carefully dip one of the caramel-coated biscuits in the chocolate, turning it gently with a small palette knife (use this to lift it out as well). Use a spoon to drizzle over more chocolate to coat it fully. Let the excess chocolate drip into the bowl, then carefully put the biscuit back on the lined tray.
  • Repeat with the remaining biscuits, then chill in the fridge for at least 30 mins or until the chocolate has set. Put the biscuits in an airtight container and store in the fridge. Will keep for five days.

I love salted caramel, and of course I love dark chocolate, so I layered these two flavors with my favorite shortbread crust. Steps:

  • Preheat oven to 325°. Beat butter, sugars and vanilla until light and fluffy, 5-7 minutes. Gradually beat in flour, mixing well. Press 3 cups of dough onto bottom of a greased 13x9-in. pan. Bake until set, 20-22 minutes. , Cool 10 minutes on a wire rack. Meanwhile, in a small saucepan, melt caramels with cream over low heat until smooth. Pour over crust. Sprinkle with salt, then chocolate chips. Drop remaining dough by teaspoonfuls over top. Bake until light golden brown, 30-35 minutes longer. Cool on a wire rack.

SALTED CARAMEL PEAR PIE BARS

Dense, buttery shortbread crust and a delicately spiced filling make these pear pie bars absolutely irresistible. And once you see how easy they are to make and to serve, chances are, you'll pick them over traditional pie every time. You'll find yourself with more salted caramel sauce than you need for the bars, but you can spoon the rest over top of anything from ice cream to waffles. Just store any leftovers in an airtight container in the fridge (and heat the leftovers before using). Sprinkle with flaky sea salt, as desired.

Salted Caramel Pear Pie Bars image

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly spray a 9x13-inch baking pan with baking spray. Line the pan with parchment paper so that there is a 2 inch overhang on the two long sides of the pan. (This makes it easier to lift the pie bars out of the pan after baking.)
  • Beat the butter, brown and white sugars, and vanilla extract for crust in a large bowl with an electric mixer until combined and fluffy, 4 to 5 minutes. Scrape down the sides and bottom of the bowl. Add the flour and salt; mix at low speed until combined. Refrigerate dough for 10 minutes.
  • With lightly moistened hands, press about 2/3 of the crust mixture evenly along the bottom of prepared pan; refrigerate pan for 5 to 7 minutes. Place the remaining 1/3 of the crust mixture in the fridge until needed.
  • Bake crust in the preheated oven until golden brown, 20 to 25 minutes. Place on a wire rack to cool. Leave the oven on.
  • To prepare the filling, toss the pear slices and lemon juice together in a large bowl. Add the brown sugar, cornstarch, cinnamon, ginger, cardamom, and salt; toss well to coat. Spread the pears evenly over the crust.
  • Tear the reserved crust mixture into small pieces. Using your hands, combine the walnuts with the dough and scatter the mixture evenly over the pears.
  • Bake in the preheated oven 1 hour, rotating pan halfway through, until the pears are fork-tender and the topping is golden brown. Cool completely in the pan, 1 to 2 hours.
  • To prepare the caramel sauce, combine the sugar and water in a medium, heavy saucepan over medium-low heat; cook, stirring often, until the sugar dissolves.
  • Increase the heat to medium-high; bring to a boil-without stirring, but instead, regularly swirling the pan and occasionally brushing down the sides of the pan with a wet pastry brush. Cook, swirling and brushing regularly, until the syrup turns a deep amber color, 12 to 17 minutes.
  • Gently pour in the heavy cream (the caramel will foam and bubbly up vigorously). Add in the butter pieces and stir gently until smooth. Remove the caramel from heat and stir in the salt.
  • When ready to serve, use the parchment overhang to lift the slab from the pan and slice into bars. Drizzle with the caramel sauce.

  • Make the shortbread biscuit base. Using a wooden spoon, beat the butter and sugar together until light and creamy, but not aerated. Sift in the plain flour and cornflour and mix to a dough.
  • Tip the dough onto a sheet of baking paper and place a second sheet of paper on top. Roll out the dough to a rectangle the same size as the base of the loaf tin, trimming to fit, if necessary.
  • Prick the chilled dough all over with a fork and bake it for 15–20 minutes, until a pale biscuit colour. Remove the shortbread from the oven and leave it to cool and firm up in the tin for 5 minutes.
  • Using the baking paper to help you, remove the shortbread from the tin. While it’s slightly warm, cut the shortbread into 10 equal fingers (about 1.5cm wide), then set them aside to cool completely while you make the caramel.
  • Make the caramel. Tip the caster sugar and liquid glucose into a small heavy-based pan and heat the mixture over a low heat until the sugar begins to melt, shaking the pan from time to time (do not stir).
  • Carefully remove the pan from the heat and plunge the base into the cold water to stop the cooking process and prevent the caramel from burning.
  • Add the cream and butter to the pan and stir until the butter melts. Tip the caramel into a clean bowl and leave it to cool (about 1 hour), then chill it until thick enough to pipe.
  • Spoon the chilled caramel into the medium piping bag fitted with the medium plain nozzle and pipe a line of caramel on the top of each shortbread finger.
  • Make the chocolate coating. Melt the chocolate in a heatproof bowl set over a pan of barely simmering water, stirring occasionally until smooth.
