Sarahs Fabulous Summer Pasta Salad Recipes
SARAH'S PASTA SALAD
This is something I threw together one day. Prepare the veggies while the pasta cooks and you're done in 10 minutes. I use different kinds of tomatoes, depending on what I have on hand. Cherry or grape tomatoes are easy to just throw in - no cutting required.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes, until al dente. Drain, and rinse under cold running water to cool.
- In a bowl, gently toss together pasta, avocado, tomato, dressing, and bacon. Chill until ready to serve.

This evolved over many a warm summer night in Brisbane. I take it to parties and it's always gobbled up immediately!

Yield 500 grams of pasta salad, 4 serving(s)
Number Of Ingredients 7
Steps:
- Put pasta on to boil.
- Halve tomatoes.
- Place tomatoes in large bowl with all other remaining ingredients, stir well, cover and leave.
- When pasta is al dente, drain, and then add to tomato mixture.
- The warm pasta will semi-cook the basil and garlic, releasing its flavour.
- Serve immediately, with crusty Italian bread and a nice glass of red wine.

Steps:
- Cook a box of pasta, drain and set aside. I choose to use a pasta that is similar in size to the clams.
- Add olive oil to a hot dutch oven or a pan large enough to hold all ingredients. Add onion and cook until translucent.
- Add the diced zucchini and garlic cooking until zucchini is nicely browned, stir frequently.
- Add clams with liquid, parsley and basil. Turn off heat. Add tomato, lemon zest and juice. Add pasta to mixture. Mix well and serve.
