POTLUCK POTATOES
I got this recipe from a group of Ministers' wives in Idaho about 15 years ago. My friends have me make it for their families all the time.

- Mix all ingredients together.
- Put mixture in a greased 13 x 9 pan.
- Bake at 325 degrees Fahrenheit for 1 hour.
SARAH'S POTLUCK POTATOES
This is a great potluck idea. I got this recipe from my mom, who made it when I was a kid. I loved it, and still do.

Steps:
- Preheat oven to 350 degrees.
- In a large microwave-safe bowl, microwave frozen hash browns for 4 minutes on high.
- Stir sour cream, butter, onion,soup, and cheese into potatoes.
- Spread mixture evenly into a greased 9X13 inch pan.
- Sprinkle corn flakes over top.
- Bake, uncovered, for 45-50 minutes or until bubbly around edges.

- Preheat oven to 450 degrees. In a large pot, bring potatoes to a boil in salted water; reduce heat and simmer until just tender, about 15 minutes. Drain and transfer to a baking sheet. Let cool 5 minutes, then lightly crush each potato with the heel of your hand. Drizzle generously with olive oil and season with salt. Roast until golden brown and crisp, about 35 minutes, turning once.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch casserole dish.
- Mix Cheddar cheese, potato soup, sour cream, cream cheese, green onions, garlic, and salt together in a large bowl. Fold potatoes into the mixture; pour prepared casserole dish. Top with Parmesan cheese.
- Bake in the preheated oven until bubbling and cheese is golden brown, about 1 hour.

- Preheat oven to 400 degrees.
- Melt 2 tablespoons butter in a large skillet over medium heat. Add onions and cook, stirring frequently, until caramelized, about 30 minutes. Season with 1/2 teaspoon salt and 1/4 teaspoon black pepper. Transfer onions to a large bowl and let cool.
- In the same skillet, melt 2 tablespoons butter over medium-high heat, and cook a quarter of the potatoes until lightly caramelized, about 5 minutes. Season with 1/2 teaspoon salt and 1/4 teaspoon pepper. Transfer to a platter and let cool. Repeat process three more times with remaining butter, potatoes, salt, and pepper.
- Arrange a quarter of the cooled potatoes in a slightly overlapping single layer in a 9-by-13-inch baking dish. Top with a third of the onions and sprinkle 1 teaspoon thyme over the dish. Layer another quarter of the potatoes over onions and thyme and top with another third of the onions and 1 teaspoon of thyme. Repeat process and finish with a layer of potatoes.
- Pour chicken stock over potatoes and transfer baking dish to oven. Bake for 25 minutes; reduce oven temperature to 350 degrees, and continue baking until potatoes are golden brown, about 30 minutes more. Remove from oven and let cool 10 minutes before serving.

- Fill a large pot with salted water and add the potatoes. Bring to a boil and cook for 10 to 12 minutes, just until the potatoes are tender. Be careful not to overcook the potatoes or they will fall apart when added to the other ingredients. Drain to potatoes and rinse with cold water to stop the cooking process, then drain again.
- In a large bowl, combine the cream of chicken soup, sour cream, cream cheese, and butter. Add in 1/4 cup of the cheddar cheese, all but 1 tablespoon of the green onions, the milk, garlic powder, salt and pepper and stir until everything is mixed together. Gently stir in the cooked potatoes, trying not to mash them too much. Pour the creamy potatoes into a large rectangular baking dish and transfer to the oven.
- Bake for 25 to 30 minutes, until the potatoes are completely heated through. Remove the potatoes from the oven and immediately sprinkle with the remaining 1/2 cheddar cheese, which will melt after just a couple of minutes. Sprinkle the creamy potluck potatoes with the remaining 1 tablespoon of chopped green onion and serve.
