SAUSAGE CHEESE BISCUITS
These breakfast-in-a-biscuit goodies will appeal to the young...and the young at heart. It's one of my favorite recipes because it doesn't require any special ingredients. -Marlene Neideigh, Myrtle Point, Oregon

Steps:
- Preheat oven to 400°. Roll out each biscuit into a 5-in. circle; place each in an ungreased muffin cup. Cut sausages into fourths; brown in a skillet. Drain. Divide sausages among cups., In a small bowl, combine eggs, cheese and onions; spoon into cups. Bake until browned, 13-15 minutes.

SAUSAGE EGG & CHEESE BISCUIT CASSEROLE
Very filling and delicious! For the biscuits I used Grands Jr. butter tasting. There were 10 biscuits in a pack and they all fit! This is a keeper for sure!

- 1. Preheat oven to 350 degrees. Spray an 11x8 inch baking dish with nonstick cooking spray. Set aside. In a large nonstick skillet cook sausage over medium-high heat stirring occasionally until sausage is browned and crumbly. Drain well. Sprinkle sausage and cheese into prepared dish. In a medium bowl, whisk together eggs, cream, thyme, garlic salt and pepper. Pour over sausage mixture. Arrange biscuits evenly over top. Bake for 20 minutes or until biscuits are golden. Cover with aluminum foil and bake 15 minutes longer. Let stand for 15 minutes before serving.

This is a tasty scramble of scrambled eggs, cheese, and pieces of sausage. Great for a Sunday morning family breakfast! You may use as much of whatever type of cheese you prefer for this recipe.

- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Drain and chop into bite-size pieces; set aside.
- While sausage is cooking, beat eggs and milk together. Pour eggs into griddle. Add cheese and cook until eggs are set. Stir in sausage and serve warm.

SAUSAGE 'N' EGG BISCUITS

- In a small bowl, combine baking mix and water just until moistened. Turn onto a lightly floured surface; knead 8-10 times. Pat or roll out to 1/2-in. thickness; cut with a floured 3-in. biscuit cutter., Place on an ungreased baking sheet. Bake at 425° for 8-12 minutes or until golden brown., Meanwhile, in a small bowl, whisk eggs and chives. Heat a small nonstick skillet coated with cooking spray over medium heat. Add egg mixture; cook and stir until set. Heat sausage patties according to package directions., To assemble, split each biscuit; layer with a cheese slice, sausage patty and scrambled eggs. Replace tops.

This is something similar to "sausage balls" that I whipped up for breakfast this morning. You could adjust the size of the "biscuits" as you wish; they would make great appetizers as well as a quick & mobile breakfast food.

Steps:
- Combine all ingredients well in a large mixing bowl.
- Form patties about 1/2" thick and 3" diameter.
- Place patties on a greased cookie sheet about 1" apart.
- Bake at 450 for 11 - 15 minutes, or until golden brown.
- Enjoy!
- Substitutions: sausage: you could use vegetarian sausage without browning.
- yogurt: milk or sour cream or buttermilk.

- Preheat oven to 400°F. Place a small rimmed baking sheet (about 17 x 12 inches) in oven 5 minutes. Remove pan from oven; brush with oil. Return to oven 2 additional minutes. Remove from oven, and arrange sausages on hot pan (making sure links do not touch). Bake until browned, about 15 minutes, turning sausages after 8 minutes. Transfer to a plate lined with paper towels; cool slightly, 5 minutes. Reserve 1 tablespoon drippings on pan. Reduce oven temperature to 325°F.
- Chop sausages. Whisk together eggs and cream in a large bowl; stir in peppers, chives, salt, pepper, chopped sausages, and half of the cheese. Pour into pan with drippings; sprinkle with remaining 1 cup cheese.
- Bake at 325°F until eggs are just set, 14 to 16 minutes. Cut into 32 squares. Spread mustard on bottom half of each biscuit, and then add 2 egg squares, arugula, sliced avocado, hot sauce, and biscuit top.
