SAUSAGE GRAVY
Grandma's own! Adjust the milk to the thickness you like. Works with bacon, too. Serve hot over freshly baked biscuits!

Steps:
- Place sausage in a large, deep skillet. Cook over medium high heat until evenly brown. Remove sausage, drain and set aside.
- Pour off most of the fat from the pan, leaving about 2 to 3 tablespoons. Return pan to medium-low heat and add flour. Using a whisk, stir vigorously until roux forms, scraping bottom of pan. Reduce heat to low and let roux cook at least 5 minutes, stirring occasionally. Grandma always "burned" hers a little on purpose.
- Add milk in a stream, whisking the whole time. After adding about 2 1/2 cups, turn heat to medium and continue cooking, stirring constantly. Bring gravy to a boil and cook to desired thickness. Add more milk if a thinner gravy is desired. You may also add some of the cooked and crumbled sausage to the gravy.

- With your finger, tear small pieces of sausage and add them in a single layer to a large heavy skillet. Brown the sausage over medium-high heat until no longer pink. Reduce the heat to medium-low. Sprinkle on half the flour and stir so that the sausage soaks it all up, then add more little by little. Stir it around and cook it for another minute or so, then pour in the milk, stirring constantly.
- Cook the gravy, stirring frequently, until it thickens. (This may take a good 10 to 12 minutes.) Sprinkle in the seasoned salt and pepper and continue cooking until very thick and luscious. If it gets too thick too soon, just splash in another 1/2 cup of milk or more if needed. Taste and adjust the seasoning.
- Spoon the sausage gravy over warm biscuits and serve immediately!

- Heat a large skillet over medium-high heat and stir in sausage. Cook and stir until sausage is crumbly, evenly browned, and no longer pink, about 10 minutes. Drain and discard any excess grease.
- Beat eggs in a large bowl; stir in milk, salt, and mustard. Fold bread cubes, Cheddar cheese, and sausage into egg mixture. Pour into a lightly greased 7x11-inch baking dish. Cover and refrigerate for 8 hours or overnight.
- Preheat oven to 350 degrees F (175 degrees C). Remove casserole from the refrigerator 30 minutes before baking.
- Bake in preheated oven until a knife inserted near the center comes out clean, about 40 minutes.

- Scramble the eggs in a large non stick fry pan. Remove to plate when they are still slightly wet.
- Fry sausages in the egg pan. Half way through cooking cut the sausages in bite sized pieces and return to pan, doing a few at a time, cutting with kitchen scissors.
- When sausage is done to your liking, sprinkle with flour until all grease is absorbed.
- Pour in evaporated milk. Stir until it starts to thicken and then return eggs to the pan. If needed you can add some water to make the gravy the consistency you desire.
- Serve the sausage, egg gravy over your favorite biscuits.

- Cook sausage and onions in a skillet until sausage is done. Drain grease. Add flour and coat meat mixture.
- In seperate bowl, combine milk, worcestershire sauce, and salt/pepper (to taste).
- Slowly stir in milk/seasoning mixture.
- Cook until gravy reaches desired thickness (Stirring frequently).
- Split biscuit in half on plate. Divide sliced hard boiled egg over top.
- Spoon gravy over biscuits and eggs.
