Steps:
- Mix the pork, brown sugar, sage, thyme, ginger, cayenne, 1 1/2 teaspoons salt, 1 teaspoon black pepper and 2 tablespoons water in a large bowl. Form into 2-inch patties; transfer to a baking sheet, cover and refrigerate at least 1 hour or overnight.
- Preheat the oven to 300 degrees F. Heat 1 tablespoon vegetable oil in a large nonstick skillet over medium-high heat; add half the sausage patties and cook, flipping once, until browned, about 5 minutes. Transfer to a baking sheet. Add the remaining 1 tablespoon vegetable oil to the skillet and repeat with the remaining patties. Transfer the patties to the oven and bake until cooked through, 3 to 5 minutes.

Lightly seasoned with just a touch of sweetness, these breakfast sausages are great addition to your breakfast plate. I make these in bulk for a quick grab-and-go weekday meal. They can be frozen, just thaw overnight in the fridge.

- Set one oven rack to the middle position and another one 6 inches from the broiler. Preheat the oven to 400 degrees F (200 degrees C). Line a baking sheet with aluminum foil and spray lightly with cooking spray.
- Combine ground pork, maple syrup, garlic, parsley, marjoram, salt, pepper, thyme, and paprika in a bowl; mix gently until well combined. Divide mixture into 6 equal portions and form into patties. Place on the prepared baking sheet and press down with the palm of your hand to flatten.
- Bake in the preheated oven on the middle rack for 8 minutes. Remove from oven and turn on the oven's broiler on low.
- Broil sausage patties on the top rack until they are golden brown, about 5 minutes. An instant-read thermometer inserted into the center should read at least 165 degrees F (74 degrees C).

I have decided that I don't like frying bacon (because it splatters) or sausage (because it gets darker outside before inside is cooked). So this is how I make sausage, and it's really good, really easy, and makes having a nice breakfast on the weekends a breeze.

- Spray broiler pan with Pam. Place patties on broiler pan. Put in 375 degree oven for 10 min, then flip. Bake 10 min more, flip again. Bake 10 min more (total of 30 min). Remove to paper towel lined plate to get grease from them, serve.
