Steps:

  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • Heat 1 tablespoon of the olive oil in a medium saucepan over medium heat. Add the onions and 1/2 teaspoon of the oregano, season with 1 teaspoon salt and cook, stirring occasionally, until soft, about 4 minutes. Add the garlic and cook until fragrant, about 1 minute. Add the tomato puree, 1/4 cup water, 5 torn basil leaves and the red pepper flakes. Bring to a simmer and cook until slightly thickened, about 4 minutes. Season with salt and pepper.
  • Meanwhile, heat the remaining tablespoon olive oil in a large skillet over medium-high heat. Add the sausage rounds and brown on both sides, about 4 minutes. Transfer to a paper-towel-lined plate. Mix the Parmesan with the remaining 1/2 teaspoon oregano in a small bowl.
  • Divide the pizza dough into 8 portions. Flatten into 4-inch squares either by stretching with your hands or using a rolling pin. Spoon 1 tablespoon of sauce onto a square and spread around. Top with 1/4 cup of the Italian cheese blend, one-eighth of the sausage and 1 basil leaf. Wrap the dough around the filling and pinch the edge and ends to seal. Place seam-side down the prepared baking sheet. Repeat with the remaining dough and ingredients.
  • Brush the rolls with olive oil and sprinkle with the Parmesan oregano mixture. Cut 2 slashes across the top. Bake until golden and bubbly, 20 to 25 minutes. Serve warm with the remaining sauce on the side for dipping.

2 tablespoons olive oil, plus more for brushing
1/2 small onion, diced
1 teaspoon dried oregano
Kosher salt
1 clove garlic, minced
One 15-ounce can tomato puree
12 large leaves fresh basil
Pinch red pepper flakes
Freshly ground black pepper
12 ounces Italian sausage, sliced into 1/4-inch rounds
2 tablespoons grated Parmesan
1 pound frozen pizza dough, thawed and at room temperature
2 cups Italian blend shredded cheese

Pizza Dough Sausage Roll Recipe - (4.4/5) image

Steps:

  • Remove dough from refrigerator and let rest to room temperature. Preheat oven with baking steel on top shelf at 500 F for one hour. Remove sausage from casing, place in the center of a 12 inch long plastic wrap. Take a second piece of plastic wrap and place on top. Using a rolling pin, press and roll the sausage into a patty by about 9 inches x 6 inches. Refrigerate until needed. Flour your work surface and stretch or roll the dough to about 12 x 8 inches. Position the dough long side facing you. Remove sausage from fridge and peel off top piece of plastic wrap. Using the bottom piece of plastic wrap flip and center the sausage on the dough, positioning it 1/2 inch from the edges. Remove plastic wrap. Trim and leave a 1 inch border around all sides. Fold up the border of the dough nearest you and then continue to roll up as you would a stromboli or jelly roll. Turn the roll seam side up and stretch the edge of the dough over to compact the roll as much as possible. Press on the seam to seal and pinch it closed. Pinch and close the ends. Brush the top with olive oil. Brushing the dough with oil will help soften it and prevent it from shattering when the roll is cut. Carefully launch the roll onto the baking steel and bake for 7 minutes. Lift and rotate 180 degrees and bake for another 3 or 4 minutes. Transfer roll to a cutting board and let it rest for 2 to 3 minutes. Add some seasonings, pecorino, oregano, pepper flakes. Slice on a diagonal into 6 or 8 pieces. This can also be served with a dabble of fresh tomato sauce.

1/2 pound of premade pizza dough
4 ounces spicy Italian sausage, or sausage of your choice
Extra virgin olive oil, for brushing
Optional pecorino, garlic oil, dried oregano for sprinkling

Steps:

  • Beat eggs with water; season with salt and pepper. Set aside. Spray an 8-inch omelet pan or nonstick skillet with cooking spray. Heat skillet over medium heat.
  • In small saucepan, heat pizza sauce.
  • Add sausage to skillet. Cook until browned. Set aside.
  • Add pepper, onion, mushrooms, and seasoning to skillet. Cook, covered, over medium heat until peppers are soft, about 2 to 3 minutes.
  • Add cooked sausage to pepper mixture. Pour eggs over pepper mixture. (Eggs should set immediately at edges). With an inverted pancake turner, carefully push cooked portions at edges toward center so uncooked portions can reach hot pan surface, tilting pan and moving cooked portions as necessary. Reserving some sauce for topping, when top of omelet is thickened and no visible liquid egg remains, spoon hot sauce over half of the omelet. Top with pepperoni and mozzarella cheese. Slide from pan onto plate. Spoon on remaining sauce. Sprinkle with Parmesan.

1/2 cup mushroom, sliced
1/2 cup pizza sauce
5 slices pepperoni
1/4 cup mozzarella cheese, shredded
1 tablespoon parmesan cheese (optional)
1/4 cup sausage (optional)
