SAUSAGE VEGETABLE PACKETS RECIPE

A great meal for busy parents, anyone with LOTS of squash on hand and can be prepared without the sausage for those vegetarians in your life. Serve with perhaps a crisp white wine and garlic bread...what more could you ask for?

Sausage Vegetable Packets Recipe image

Steps:

  • 1. In a large bowl, combine all the ingredients. Divide between two pieces of double-layered heavy-duty foil (about 12-in. square). Fold foil around sausage mixture and seal tightly.
  • 2. Grill, covered, over medium heat for 25-30 minutes or until the vegetables are tender. Open foil carefully to allow steam to escape.

1/2 lb smoked sausage, cut into 1/2-inch pieces
3 medium zucchini, sliced
3 medium tomatoes, sliced
1 medium green pepper, julienned
1/4 c butter, melted
1 envelope onion soup mix
1 Tbsp brown sugar
1/4 tsp salt
1/4 tsp pepper

Summer Sausage Foil Packets image

Steps:

  • In a large bowl, combine the first eight ingredients. Gently stir in the chicken and tomatoes. Divide mixture among eight double thicknesses of heavy-duty foil (about 12 in. square). Top each with a butter cube., Fold foil around mixture and seal tightly. Grill, covered, over medium heat for 20-25 minutes or until chicken is no longer pink and vegetables are tender. Carefully open foil to allow steam to escape; drizzle with dressing.

  • Add all the ingredients to a big mixing bowl; stir to mix well.
  • Spoon mixture evenly onto 2 pieces of double layered heavy duty foil that measure 12x12 inches.
  • Fold foil around mixture to form a packet; seal tightly and allow room for circulation of heat.
  • Place packets on the grill over medium heat; cover and grill for 25-30 minutes or until the vegetables are tender.

Steps:

  • In a large skillet, cook sausage over medium heat in oil until a thermometer reads 160°; drain. , Cut into 1/2-inch slices.
