CARAMELIZED BANANA WITH RUM SAUCE
Steps:
- Melt butter in a 10-inch heavy skillet over moderately high heat until foam subsides, then sauté banana, cut sides down, shaking skillet, 1 minute. Remove skillet from heat (away from flame) and sprinkle brown sugar around banana, then pour rum around banana. Return skillet to heat and continue to sauté, shaking skillet occasionally, until sugar begins to melt, about 30 seconds.
- Add water, nutmeg, cinnamon, and a pinch of salt and cook over moderate heat, shaking skillet occasionally, until sauce is slightly thickened, 1 to 2 minutes.
- Serve banana hot, sprinkled with nuts.

- Melt 1 1/2 tablespoons butter in a large skillet over medium-high heat. Add 2 tablespoons sugar; stir until the sugar melts, 1 to 2 minutes. Add half the banana slices; let sit, shaking pan occasionally, until bananas are lightly golden on bottom, 1 1/2 to 2 minutes. Turn bananas over; cook 1 minute more. Remove from heat; add 2 tablespoons bourbon. Cook 30 seconds to cook off alcohol. Transfer to single layer on plate to cool. Repeat with remaining ingredients. Cool before filling Banana Cake.
SAUTEED BANANAS IN PRALINE SAUCE WITH VANILLA ICE CREAM
Steps:
- Heat grill to high. Melt the butter in a large saute pan on the grates of the grill. Whisk in the sugar and cook until melted and smooth. Standing back, carefully add the bourbon and cook for 2 minutes. Add 1/3 cup pecans and cook for 30 seconds. Add the bananas and spoon the sauce over the bananas constantly until softened, about 4 to 5 minutes.
- Scoop the ice cream into bowls and top with the bananas and sauce. Garnish with the remaining chopped pecans and serve.
CINNAMON SAUTEED BANANAS
I believe this is an old Helen Corbitt recipe. It is an excellent, easy dessert and complements so many things.

Steps:
- Cut bananas crosswise into 1/4" slices.
- Toss slices in a bowl with the sugar, cinnamon and lemon juice.
- Heat saute pan over medium-high heat, add butter.
- When butter is bubbly, add the bananas.
- Holding the pan by the handle, toss the bananas every 10 seconds or so for 2-3 minutes until tender.
- (The slices should hold their shape and be carmelized) Serve on a warm plate-- good with ice cream or angel food cake or by itself!
ICE CREAM TOPPED WITH SAUTEED BANANAS
Steps:
- Melt butter in medium saute pan. Add sliced bananas. Add Banana and Amaretto liqueurs. Add sugar and cinnamon. cook for about three minutes. Remove from heat. Place two scoops of ice cream into two brandy glasses. Spoon hot mixture over top of ice cream. Serve at once.

- Heat 1 tablespoon butter in a 10-inch heavy skillet over moderately high heat until foam subsides, then sauté half of bananas, cut sides down first, turning over once, until golden, 1 1/2 to 2 minutes total. Transfer with a slotted spatula to 2 dessert bowls. Heat 1 tablespoon butter and sauté remaining bananas in same manner, transferring to 2 more bowls.
- Melt remaining 2 tablespoons butter in skillet over moderate heat, then add brown sugar, cream, cardamom, and a pinch of salt and simmer, stirring occasionally, until sauce is slightly thickened, about 2 minutes. Remove from heat and stir in lime juice.
- Spoon sauce over bananas and ice cream.
