SIRLOIN TIPS WITH MUSHROOMS
My husband is an avid hunter, so I look for beef recipes that also work using venison. This one fills the bill nicely.

- In a skillet, brown beef in butter; remove and set aside. To the same skillet, add the oil and mushrooms, onion and garlic; saute until tender. Add beef; transfer to a greased 1-qt. baking dish. Cover and bake at 325° for 1 hour or until beef is tender., In a saucepan, combine the cornstarch, cream, broth, wine or additional broth, Dijon mustard and soy sauce until smooth. Bring to a boil; cook and stir for 1 minute or until thickened. Stir into meat mixture until blended. Serve over noodles.

SIRLOIN STEAK WITH MUSHROOM MARSALA SAUCE

- Begin the Marsala sauce by heating the olive oil in a large saute pan. Cook the shallots (or onion) and mushrooms gently until they become translucent. Deglaze the pan with the wine and add the stock and fresh thyme. Allow to reduce by two-thirds.
- Preheat the grill to medium-high heat and season meat on both sides with salt and pepper. Sear the meat on both sides, and grill to about 128 degrees F internal temperature for medium-rare. Remove meat from grill and let rest.
- Strain Marsala sauce and whisk in butter to finish. Season with salt and pepper, as needed. Spoon the sauce over the grilled steaks, garnish with chopped chives, and serve.
SAUTEED SIRLOIN AND MUSHROOMS
Jazz up your dinner plate with broiled sweet peppers(any color) into wide strips, brush with cooking oil, and broil until charred. Remove peel, if desired. Serve with a basket of toasted garlic bread.

Steps:
- Cut steak into 4 servings-size pieces.
- Sprinkle with herb pepper or garlic pepper.
- In a 10-inch skillet cook steaks in hot butter over medium heat for 8 to 10 minutes or to desired doneness, turning once.
- remove steak from pan; cover and keep warm.
- For mushroom glaze, carefully add beef broth and hoisin, teriyaki, or Worcestershire sauce to skillet.
- Cook until bubbly, scraping brown bits from bottom skillet.
- Stir in onoin wedges and sliced mushrooms.
- Cook over medium-high about 8 minutes or until vegetables are tender and the glaze is reduced to half its volume (1 cup).
- Transfer warm steak to dinner plates and spoon glaze on steaks.
STEAK TIPS WITH MUSHROOM SAUCE

- Preheat an outdoor grill for medium-high heat. Melt butter in a large skillet over medium-high heat. Sautee the shallot until transparent, then add mushrooms, and cook, covered, until darkened, about 5 minutes. Remove mushrooms from pan, and set aside. Deglaze the pan with one can of beef broth, and burgundy wine. Increase heat, and bring to a boil. Allow the mixture to boil until it has reduced by 1/3.
- Grill the sirloin tips to desired doneness. Season with salt and pepper if desired. Remove to a plate, and set aside.
- When the sauce is reduced, stir in the other can of beef broth, and garlic. Return to a boil, and continue to cook for another 5 to 10 minutes. Sauce will be thin like au jus. Whisk in flour, and cook until the sauce is the desired thickness. Taste and adjust seasoning if necessary. Stir in the mushrooms. Serve tips with mushroom sauce spooned over.

- In a large cast iron skillet over medium-high heat, add olive oil and butter, mushrooms, garlic, thyme, rosemary, and oregano. Cook for about 3 minutes or until tender. Remove and set aside on a plate.
- Turn the skillet to high heat. Add the steaks. Cook on each side for 3 minutes or until outside is browned. Reduce heat to medium-high. Cook the steaks to the desired doneness. Mine took about 10 minutes flipping 3 times to get a medium well.
- Right before the steaks are done, make the garlic butter compound. Mix the butter, garlic and fresh chopped herbs. Slather on top of steaks. Add the mushrooms back to the pan and heat through and let the butter melt into the steaks.
