Steps:

  • Fry bacon. Drain. Crumble when cooled.
  • Fry onion and mushroom until onion is translucent.
  • Shred cheese.
  • Add all ingredients except cheese into a skillet and cook until potatoes are done. Top with shredded cheese and serve with toast!

1 onion, finely chopped
1 lb bacon, fried and crumbled
2 cups diced fried mushrooms

Steps:

  • In a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. add the potatoes, water, salt and pepper. Cover and simmer for 20 minutes or until potatoes are tender. , Add tomatoes; cook for 5 minutes. Pour eggs over mixture. Cook and stir until eggs are completely set. Top with cheese. Cover and cook for 1 minute or until the cheese is melted.

  • Keep heat on low. Pour in the eggs. Cook for 20 to 30 seconds. When the eggs just start to set, use a flat spatula to scrape sections of eggs, gently stirring constantly until cooked but still soft, about 1 minute. Or, complete Step 2 of the Tofu Scramble.
