SAVORY CHICKEN BREASTS

This is my favorite chicken recipe. It is delicious. My whole family loves it.

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place chicken breasts in a 9x13 inch baking dish. Season with ground black pepper to taste. Top each breast with a slice of cheese.
  • Mix together the soup and milk and pour mixture over chicken. Sprinkle bread crumbs on top and drizzle with melted butter/margarine. Bake covered in the preheated oven for 30 minutes. Uncover and bake for another 20 minutes or until golden brown.

Steps:

  • Heat oven to 400°F. Spray 15x10x1-inch pan with cooking spray.
  • Brush chicken with 2 tablespoons of the mustard, then coat with Bisquick mix. Place 1 chicken breast in each corner of pan. Place potatoes, bell pepper and onion in center of pan; brush vegetables with remaining 2 tablespoons mustard. Spray chicken and vegetables with cooking spray; sprinkle evenly with cheese and paprika.
  • Bake uncovered 35 to 40 minutes, stirring vegetables after 20 minutes, until potatoes are tender and juice of chicken is clear when center of thickest part is cut (170°F).

  • Preheat oven to 375'.

SAVORY CHICKEN DINNER

Chicken and red potatoes baked in a savory sauce. This is a fast and easy dinner. I found this recipe in Taste Of Home Quick Cooking 2005. My future hubby and I really enjoyed this dish we thought it was so tasty. When I made this I made several minor changes to the recipe. I used 3 chicken quarters (bone-in) that I cut into pieces to make a thigh and leg, 8 small red potatoes and 2 small onions. Next time I make this I plan to bump up the onions as we enjoy baked onions. I may add some sliced carrots to the mix.
