PIZZA WITH CARAMELIZED ONIONS, RICOTTA AND CHARD

This luxurious pizza is topped with tender caramelized onions spread over a creamy mixture of ricotta, Parmesan cheese and chopped Swiss chard.

Pizza With Caramelized Onions, Ricotta and Chard image

Steps:

  • Thirty minutes before baking the pizza, preheat the oven to 500 degrees. Heat the olive oil over medium heat in a large, heavy skillet. Add the onions. Cook, stirring often, until tender and just beginning to color, about 10 minutes. Add the thyme, garlic and a generous pinch of salt. Turn the heat to low, cover and cook another 10 to 20 minutes, stirring often, until the onions are golden brown and very sweet and soft. Remove from the heat.
  • While the onions are cooking, stem and wash the chard leaves, and bring a medium pot of water to a boil. Fill a medium bowl with ice water. When the water comes to a boil, salt generously and add the chard. Blanch for one to two minutes, just until the leaves are tender, and transfer to the ice water. Drain and squeeze out excess water. Alternatively, steam the chard for two to three minutes until wilted, and rinse with cold water. Chop the chard medium-fine.
  • Roll out the dough, oil a 14-inch pizza pan and dust with cornmeal or semolina. Place the dough on the pan.
  • In a medium bowl, combine the ricotta, egg yolk, Parmesan and chard. Spread over the pizza dough in an even layer, leaving a 1-inch border around the rim. Spread the onions over the ricotta mixture.
  • Place in the hot oven, and bake 10 to 15 minutes until the crust and bits of the onion are nicely browned. Remove from the heat, and serve hot or warm.

Tomato, Caramelized Onion, and Stilton Pizza image

Steps:

  • Caramelize onion by melting 3 tablespoons butter in a saute pan over medium heat. Add onion. Cook for 15to 20 minutes, or until onion is a deep brown, stirring occasionally. Remove from heat and reserve.
  • Sprinkle your rolling surface with a handful of cornmeal or flour. Place dough in the middle of the surface. Roll dough out gently 1/4-inch thick, into either a 12-inch rectangle or circle. Brush both sides with olive oil and set aside until ready to grill.
  • If you are grilling on a charcoal grill, set coals on one side of the grill.
  • Place dough directly on the cooking grate over medium heat for 1 to 3 minutes, until the crust is well marked and browned. Flip dough and spread tomato slices evenly over crust. Sprinkle onion over top, then sprinkle cheese over the top. Move to indirect heat (for charcoal: the side of charcoal grill that has no coals. For gas: turn off burner directly under pizza). Cover grill and cook for 5 to 10 minutes, or until bottom is well browned, and cheese is fully melted.
  • Remove from grill, season with salt and pepper and slice. Serve immediately

Steps:

  • Peel, then slice the onions into thin wedges. Thinly slice the garlic. Heat the butter and oil in a large wok or frying pan, tip in the onions and garlic and cook over a medium-high heat for 15 minutes, stirring every now and then until golden. Stir in the sugar and cook a minute or two longer. Season with salt and pepper. Preheat the oven to fan 200C/conventional 220C/gas 7.
  • Put the pizza bases on two oiled baking sheets. Spoon the onion mixture over the pizza bases. Now crumble over the feta and scatter with rosemary. Grind over some black pepper and drizzle with a little oil. Bake for 10 minutes and serve with a green salad.

GRILLED PULLED PORK PIZZA

Here's a recipe from About.com that is a real winner. Shred your leftover pork roast and use it to top this wonderful pizza. You can use your own recipe for pizza dough if you prefer. I have made this with a prepared Boboli crust as I am not a griller (using less of the topping ingredients) and we enjoyed it that way. I did not bake the meat on the crust so as not to dry it out, but added it afterwards with toppings and returned it to oven to melt the cheese. We really liked this.

Grilled Pulled Pork Pizza image

Steps:

  • Preheat grill.
  • Divide pizza dough into 4 equal pieces. Roll into rounds about 8- to 9-inches in diameter. Place pizza rounds on hot grill. Allow to slightly brown on both sides.
  • Remove rounds from grill and top with barbecue sauce, pulled pork, onion, pickles, tomatoes and cheese, in that order.

Steps:

  • Cook onions in butter in large skillet on medium-high heat 15 to 20 min. or until onions are tender, stirring occasionally. Add dressing; cook on medium heat 10 min. or until onions are caramelized, stirring occasionally. Cool completely.

Steps:

  • For the dough:.
  • Dissolve yeast in warm water.
  • Stir in remaining ingredients.
  • Beat about 20 strokes, then allow to rest covered about 5 minutes.
