CHICKEN WITH SAVORY SAUCE
Enjoy chicken in a new way - a sweet and peppery array of flavors; herbs, mushrooms, currants wine and vinegar, all go into making this dish a superb entrée' for your dinner!

Steps:
- Heat oil in 12-inch skillet over medium heat. Cook onions, rosemary, parsley, thyme, garlic and chili in oil 5 minutes, stirring frequently.
- Add chicken to skillet. Cook about 15 minutes, turning occasionally, until chicken is brown. Add mushrooms, 1/2 cup of the wine and the vinegar. Heat to boiling; reduce heat. Simmer uncovered about 5 minutes or until about half of the liquid has evaporated.
- Pour remaining 1/2 cup wine over chicken; sprinkle with currants and salt. Cover and simmer about 20 minutes or until juice of chicken is no longer pink when centers of thickest pieces are cut. Uncover and cook 5 minutes longer to crisp chicken.

SAVORY WINE MARINADE FOR CHICKEN
This is one of my go to marinades for barbecued chicken. Its from Better Homes and Gardens all-time favorite barbecue recipes cookbook. This will marinate 4 to 8 pieces of chicken, about 3 pounds. Submitted to www.recipezaar.com on Feb. 18, 2010.

Steps:
- Thinly slice the onion and separate into rings.
- In a non-reactive bowl combine olive oil, wine, lemon juice, parsley, salt and hot sauce, add onion.
- Place chicken pieces in a 1 gallon zip lock bag, pour marinade mixture over chicken, close bag and refrigerate for at least 4 hours or overnight, turning bag occasionally.

- Make the marinade by combining the white wine, 3 tablespoons olive oil, lemon zest, 2 of the chopped stems of rosemary, 2 full rosemary sprigs, smashed garlic and the chicken. Marinated the chicken in a baking dish covered in saran wrap or gallon size ziploc bag. Marinate in the fridge for at least 2 hours, or up to 2 days.
- In a small bowl, make the olive oil rosemary mixture by combining the remaining 3 tablespoons olive oil and the last stem of finely chopped rosemary. Set aside.
- Preheat your grill over medium-high heat, and brush the grates with olive oil. Remove the chicken from the marinade and grill for minutes roughly 8 minutes per side, occasionally using a brush to baste the chicken with the wine marinade. Cook until the chicken is cooked thru and reaches an internal temperature of 165 degrees. During the last 1 minute of cooking brush both sides of the chicken with the rosemary olive oil mixture. Remove from heat and allow to rest for 3 minutes.
