SCALLOPS ON THE HALF SHELL
Steps:
- Preheat the oven to 450 degrees F.
- Remove the side muscles from the scallops and rinse with cold water and thoroughly pat dry.
- Melt the butter in a medium saute pan over medium heat. Once the butter is melted add the garlic and a pinch of salt and cook for 30 seconds. Remove the pan from the heat and toss in the bread crumbs until well combined. Set aside.
- In a small bowl, toss together the tomato, parsley and 1/4 teaspoon salt. Evenly divide the tomato mixture between 4 oven proof ramekins or scallop shells. Place the scallops over the tomato mixture and top with the cracker or bread crumbs. Bake in the oven for 8 to 10 minutes or until golden brown on top. Serve immediately.
YEAR-END SCALLOPS ON THE HALF SHELL

LIVE SHELL ROASTED JUMBO DAY BOAT SCALLOPS
Steps:
- Remove the scallops from the shells using a dinner knife or a butter knife. Remove the intestines and innards and rinse off the sand, if any. Cut the scallops in half, lengthwise. Clean the deeper of the 4 scallop shells and set aside to be used for cooking the scallops in later.
- Best if cooked over Bincho charcoal (Japanese charcoal), but a conventional charcoal BBQ grill will do, or even a gas range at home.
- Place scallop shells over a medium fire, pour the sake, dashi and soy sauce carefully into the shells. When the sake comes to a light boil place scallop halves in the broth so they are not stacked, 2 scallop halves per shell. Cook for about 1 minute then flip over the scallops and add the chili oil, yuzu, and sesame oil and cook for an additional 1 minute, the scallops are best to serve medium rare to medium.
- Mix the daikon with the ponzu and set aside.
- Whip 2 egg whites then mix with 1 1/2 cups of salt to a solid consistency. Make 4 golf ball size balls and place in center of the serving dish. Remove shells with the scallops from the heat carefully. Place the shells on the balls and press down firmly, so that the shells do not move around on the plate. Garnish with a tiny pile of grated daikon mixed with ponzu and top off with garlic chips and julienned scallions.
- Heat 1/4-inch vegetable oil in a saute pan over medium heat. Add the garlic and lightly fry until golden brown. Remove to a paper towel lined plate.
WASABI CRUSTED SCALLOPS
Steps:
- To make the coulis: Heat the canola oil over medium heat in a medium saucepan. Add the shallots, ginger, and garlic and cook, stirring frequently until the shallots are translucent, about 5 minutes. Add the sesame oil, plum wine, lobster stock, coconut milk, sweet chili sauce, and simmer until the flavors blend and the mixture reduces by about one-quarter, about 8 minutes. Add the mango puree and season with lime juice and salt. Simmer for another 3 to 5 minutes then strain and set aside in a warm place.
- To make the crust: In a spice grinder or mortar, grind the mustard and coriander seeds with the peppercorns and wasabi peas. Adjust the seasoning with wasabi powder and salt.
- Shortly before serving roll the scallops in the crust. Heat the oil in a large skillet over medium-high heat. Add the scallops and cook until they begin to crisp then flip. Cook the scallops until they are crisp on all sides. Spoon the scallops onto warm plates. Spoon coulis around the scallops and serve.
LIME GLAZED SCALLOPS ON CREAMY WASABI FETTUCCINE

- Bring a large pot of salted water to boil.
- Add pasta and cook until al dente, 10 to 12 minutes.
- Drain well.
- Chop 1/4 cup of the ginger and reserve.
- Remove connective muscle from each scallop and discard.
- Pat dry.
- Toss scallops with lime peel, garlic and a little salt and pepper.
- Heat veggie oil in a large, heavy frypan set over medium high heat.
- Add about on third of the scallops to the pan and cook, without disturbing, for 2 minutes or until deep golden.
- they may stick at first but will then release as they become brown.
- Turn and cook for 2 minutes longer or until cooked through and deeply golden on the other side.
- Remove from pan and repeat as necessary to cook all remaining scallops.
- Blend wasabi with 2 tablespoon of cream to make a paste.
- Pour remaining cream into frypan used to cook the scallops.
- Add butter and bring to a boil.
- Reduce heat and whisk in wasabi paste, chopped ginger and parmesan, if using.
- Add noodles and cooked scallops.
- Toss to coat in sauce.
- Taste and adjust salt and pepper to taste.
- Transfer to pasta bowls and garnish with rosettes made from the remaining pickled ginger and chives.

- Slice the top and bottom of each fruit with a paring knife. Set one of the flat sides on your work surface. From top to bottom, following the curve of the fruit, cut away peel and white pith. Trim off any remaining pith. Holding fruit over a bowl, cut along both sides of each segment, staying close to the membrane, to release. Cut each segment into 5 pieces; set aside.
- Preheat a grill pan over medium-high heat. Whisk together citrus juice, wine, and olive oil in a small bowl; and parsley and stir to combine. Spoon citrus mixture over scallops and place on grill; cook 3 to 5 minutes.
- Remove scallops from grill, spoon fruit mixture over each scallop and serve.
