SEAFOOD BISQUE
We live on the Gulf Coast, where fresh seafood is plentiful. I adapted several recipes to come up with this rich bisque. It's great as a first course or an entree, and it can be made with just shrimp or crabmeat. -Pat Edwards, Dauphin Island, Alabama

Steps:
- In a Dutch oven, combine the first 8 ingredients. Bring to a boil. Reduce heat; add the shrimp, crab and mushrooms. Simmer, uncovered, for 10 minutes. Stir in the wine, salt and pepper; cook 2-3 minutes longer. Top with onions if desired.

CREAMY SCALLOP CHOWDER
A wonderful soup featuring white wine, onions and tender scallops. You may use either ocean or bay scallops.

Steps:
- Wash and drain scallops. If scallops are large, cut in half. In a small stock pot, melt butter over medium-low heat. Saute onions and mushrooms until tender.
- Stir in flour. Pour in milk and stir over medium heat until thickened and bubbly. Add wine, scallops, salt and pepper. Cook over medium heat until thickened. Serve topped with Swiss cheese and parsley.

Steps:
- In med saucepan, sauté onion in melted butter until softened.
- Blend flour into butter mixture and gradually add milk, stirring constantly.
- Continue cooking and stirring until thickened.
- Add salt, pepper, garlic, bay leaf and scallops.
- Cook over low heat 15 minutes.
- Remove bay leaf and serve.

- In a Dutch oven, heat butter over medium-high heat. Add red onion and mushrooms; saute for 4-5 minutes or until tender. Add garlic; cook 1 minute longer. Stir in the flour, salt and pepper until blended; add tomato paste. Gradually whisk in broth; bring to a boil. Reduce heat; cover and simmer for 5 minutes., Add clams and shrimp; return to a boil. Reduce heat; simmer, uncovered, 5-10 minutes longer or until shrimp turn pink, stirring occasionally. Stir in crab and cream; heat through (do not boil). Serve with cheese and green onions.

- Roughly chop 1 pound of sea scallops (reserve the other ½ pound), add to the veggies and cook for about 3-4 minutes.
- Add stock and white rice. Bring to a boil, cover, reduce heat to a steady simmer and cook for about 12-15 minutes or until rice is cooked.

- Gather and prep the ingredients - chop the onion, carrot, and potato fairly small (1/2" dice) to get them tender fairly quickly. Leave the celery in large pieces.
- Sauté the vegetables - In a large saucepan, melt 3 tablespoons butter and sauté over medium heat the onion, carrots, celery and potato. Decrease the heat to medium-low and cook for 5 minutes, stirring occasionally. Add dry white wine or sherry and continue to cook for another 5 minutes (alcohol will evaporate).
- Cook the base - Stir in tomato paste, then add seafood stock, bay leaves and thyme. Cover and gently simmer for 20 minutes until vegetables are tender.
- Purée the base - Remove bay leaves, and celery pieces (if they're large). I prefer an immersion blender to pouring hot liquid into a blender. Blend until very smooth. If you added chopped celery as I accidentally did on photo day, you may want to pour through a strainer. Be careful!
