- Combine the garlic salt, garlic-pepper and lemon-pepper; rub over roast. Place on a rack in a shallow roasting pan. Bake, uncovered, at 325° for 1-1/2 to 2 hours or until a thermometer reads 145°., Meanwhile, in a large saucepan, combine the basting sauce ingredients. Bring to a boil; reduce heat. Simmer, uncovered, for 10 minutes. Brush over roast occasionally while baking. Let roast stand 10 minutes before slicing.

- 1. In a gallon Ziploc bag, mix the dry spices up well.
- 2. Add the pork loin and make sure it's covered in the spices. Seal the bag and place it in the refrigerator for 3-24 hours. The longer it sits the better it will taste.
- 3. Before adding the ingredients, line your Crock Pot with a cooking liner (I get these at Target) or grease it. In the Crock Pot, add the carrots, celery, onion, and water.
- 4. Remove the pork loin from the Ziploc bag. Discard the bag and remaining spices. Place the pork loin over the vegetables in the Crock Pot. Cook on medium heat 6 hours, or longer if you have the time.
- 5. Once the meat is done, you can shred it for sandwiches or slice it into loin medallions.
ROASTED PORK LOIN

- Preheat oven to 350 degrees F (175 degrees C).
- Crush garlic with rosemary, salt and pepper, making a paste. Pierce meat with a sharp knife in several places and press the garlic paste into the openings. Rub the meat with the remaining garlic mixture and olive oil.
- Place pork loin into oven, turning and basting with pan liquids. Cook until the pork is no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read 145 degrees F (63 degrees C). Remove roast to a platter. Heat the wine in the pan and stir to loosen browned bits of food on the bottom. Serve with pan juices.

- Preheat the oven to 450 degrees F.
- In separate bowl mix dry ingredients such as garlic powder, oregano, cumin, coriander, thyme and salt. Stir mixture with a fork until all the ingredients are well combined and they form a seasoning. This will be used as a rub to ensure the pork is well seasoned throughout. Sprinkle the rub over the tenderloin with a dry hand, then rub the pork with the seasoning over both sides of the meat, pressing gently so the seasoning adheres well to the tenderloin.
