Steps:

  • Preheat oven to 350°. Line a greased 15x10x1-in. baking pan with waxed paper; grease paper., In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. In another bowl, whisk flour, baking cocoa, baking powder and baking soda; add to creamed mixture alternately with milk, beating just until combined. Transfer to prepared pan., Bake 15-20 minutes or until a toothpick inserted in center comes out clean. Cool 10 minutes before inverting onto a wire rack to cool completely. Carefully remove waxed paper., In a small saucepan, sprinkle gelatin over cold water; let stand 1 minute. Heat and stir over low heat until gelatin is completely dissolved. Cool to room temperature., Sift confectioners' sugar and cocoa together. In a large bowl, beat cream until it begins to thicken. Beat in confectioners' sugar mixture and vanilla. While beating, gradually add gelatin until stiff peaks form., Trim cake edges; cut crosswise into fourths. Place one cake layer on a serving plate; spread with 1/2 cup filling. Repeat layers three times. Refrigerate until serving.

Steps:

  • Devil's Food Cake.
  • Method of Preparation.
  • Using a stand mixer or a bowl and whisk, mix all the dry ingredients and oil together.
  • Add eggs one at a time.
  • Add hot coffee or water in 3 stages, mixing well each time, and scraping the bowl each time.
  • Pour onto a greased sheet pan and spread evenly.
  • Bake at 350 for 12 minutes.
  • Tart Raspberry Mouse.
  • Method of Preparation.
  • Bloom gelatin, and set aside.
  • Heat Raspberry Jam in a small sauce pan.
  • Add the gelatin to the heated jam.
  • Cool on ice.
  • Whip Cream and fold into chilled raspberry jam mixture.
  • Drunken Raspberries.
  • Method of Preparation.
  • Place cleaned raspberries in a bowl, pour Chambord over the raspberries and toss in sugar.
  • Allow to sit at room temperature.

Chocolate Raspberry Mousse Cake image

Steps:

  • Chocolate Cake: In a large bowl, beat egg yolks with 1/4 cup sugar until very pale.
  • In a separate bowl, beat the egg whites until soft peaks form; gradually beat in the remaining sugar until stiff peaks form.
  • Fold the egg white mixture into the egg yolk mixture.
  • Sift the flour and cocoa over the egg mixture; gently fold in.
  • Pour into a buttered 8-inch springform pan; bake is a 350 degree F oven for 30 to 35 minutes or until the top springs back when lightly touched.
  • Run a knife around the edge of the cake to loosen it.
  • Let cool on a wire rack.
  • Raspberry Syrup: In a small saucepan, combine sugar and water; cook over medium heat until the sugar has dissolved, about 1 minute.
  • Stir in the liqueur.
  • Let cool.
  • Raspberry Mousse: In a small saucepan, sprinkle gelatin over water; let stand for 5 minutes to soften.
  • Puree the berries in a food processor and then strain through a sieve to remove the seeds.
  • There should be approximately 2 cups of puree remaining.
  • Transfer the puree to a separate saucepan.
  • Add sugar and lemon juice; cook over medium heat, stirring occasionally, until the sugar has dissolved, about 5 minutes.
  • Stir in the liqueur; transfer to a large bowl.
  • Over low heat, heat the gelatin until dissolved; stir into the raspberry mixture.
  • Chill, stirring occasionally, over a larger bowl of ice and water for about 20 minutes or until the consistency of raw egg whites.
  • Whip the cream; fold into the cooled raspberry mixture.
  • Reserve 1/2 cup for garnish.
  • To assemble, cut the cake into 3 or 4 thin layers; reserve 2 layers and freeze the remaining layers for another use.
  • Sprinkle 1 cut side of each of the 2 layers with the raspberry syrup.
  • Place 1 layer, syrup side up, in a 9-inch springform pan; pour in half of the raspberry mousse.
  • Top with the second cake layer; pour in enough of the remaining mousse to come almost to the top of the pan.
  • Smooth the surface.
  • Refrigerate until firm, 1 to 2 hours.
  • Chocolate Glaze: In the top of a double boiler over hot, not boiling, water, melt the chocolate with the cream, stirring until smooth.
  • Let it cool to room temperature yet still spreadable; pour over the mousse and spread evenly.
  • Spoon the remaining mousse into a pastry bag fitted with a small plain tip; pipe 3 concentric circles over the top of the cake.
  • Pull a toothpick through the circles to form a spider web design.
  • Refrigerate until chilled.

Steps:

  • For crust:
  • Finely grind cookie pieces in processor. Add butter; blend until crumbs are moist. Press mixture onto bottom and halfway up sides of 9-inch-diameter springform pan with 2 3/4-inch-high sides. Freeze while preparing mousse.
  • For mousse:
  • Place liqueur in heavy medium saucepan. Sprinkle gelatin over liqueur; let stand until gelatin softens, about 20 minutes.
  • Press raspberries firmly through sieve into large measuring cup. Add enough reserved juices to puree in cup to measure 1 2/3 cups berry mixture. Add berry mixture and 1/2 cup sugar to gelatin mixture. Stir over medium-low heat just until sugar and gelatin dissolve, about 3 minutes. Remove from heat. Add white chocolate; stir until melted. Transfer raspberry mixture to large bowl. Chill until thick but not set, stirring often, about 2 hours.
  • Beat cream, powdered sugar and vanilla in bowl until stiff peaks form. Fold cream into raspberry mixture in 3 additions. Transfer mousse to crust; smooth top. Freeze until firm, at least 6 hours. (Can be made 4 days ahead. Cover; freeze.)
  • Cut around pan sides; release pan sides. Place torte on platter. Arrange raspberries around top edge of torte. Decorate with Chocolate Leaves.

Steps:

  • In a saucepan, melt butter with sugar.
  • Remove from heat, add 1 cup raspberries, liqueur, coffee and melted chocolate, and stir until mixture has a smooth consistency.
  • In a separate bowl, beat eggs and egg yolks until frothy.
  • Lightly whisk eggs into chocolate mixture until it thickens.
  • Preheat over to 325 degrees.
  • Line sides and bottom of an 8” springform pan with parchment paper.
  • Pour in batter and place pan on baking sheet to catch any leaks.
  • Bake for 1 hour.
  • The torte will be cooked, but not set in centre, so let cool for 20 minutes before springing the pan and removing parchment paper from sides.
  • Refrigerate until completely chilled.
  • Purée the reserved 1 cup raspberries, and sweeten with sugar to taste.
  • Top individual slices with raspberry purée.

A real treat. BUT-When you assemble this I would advise you to put the sponge base in a springform tin or something that will keep the sides straight. My girlfriend and I made it and the mousse started to ooze down the sides, the picture she had showed it looking really straight sided. But it was soooooooo yummy.

Raspberry Mousse Cake image

Steps:

  • Preheat oven to 180°C.
  • Brush a 20cm round spring form tin with melted butter.
  • Sift flours and cornflour 3 times onto greaseproof paper.
  • Beat eggs until thick and pale. Add sugar gradually, beating constantly until dissolved and mixture is pale yellow and glossy.
  • Transfer mixture to a large mixing bowl.
  • Using a metal spoon , fold in dry ingredients quickly and lightly.
  • Spread mixture into prepared tin.
  • Bake 15 minutes or until sponge is lightly golden and shrinks from the side of tin.
  • Leave sponge in tin for 3 minutes before turning onto wire rack to cool.
  • To Make Mousse: Process 315g of the raspberries to a smooth texture in blender or processor, pass through a fine sieve. Reserve half of the puree for serving.
  • Beat egg and sugar together until creamy.
  • Add cream cheese, beat until smooth.
  • In a separate bowl beat cream until soft peaks form.
  • Combine gelatin with water in a small bowl, stand bowl in hot water, stir until gelatin dissolves.
  • Using a metal spoon, fold gelatin, half of the puree and reserved whole raspberries into cream cheese mixture, then fold in cream.
  • Cover with plastic wrap and put in the refrigerator 10 minutes or until the mixture has thickened, stirring occasionally.
  • To Assemble: Cut cake in half horizontally.
  • Place first cake layer on a board.
  • Spread cake evenly with mousse.
  • Top with remaining cake layer, refrigerate until mousse is set. For serving, sift icing sugar over top of the cake. Cut cake into wedges, place on individual serving plates and spoon reserved puree around cake.
