MOLASSES COOKIES
Making these soft, chewy cookies with a rich flavor has been a family tradition since my children were small. At Christmastime, I shape the dough into gingerbread men with tasty raisin eyes and buttons. -Sue Bartlett, Berlin, Wisconsin

- In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in molasses and water. Combine the flour, baking soda, salt, cinnamon and ginger; gradually add to creamed mixture and mix well. Cover and refrigerate for 4 hours or until easy to handle., On a lightly floured surface, roll out dough to 1/8-in. thickness. Cut with a floured 5-in. gingerbread man cutter. Place 1 in. apart on ungreased baking sheets. , Bake at 375° for 6-8 minutes or until edges are golden brown. Remove to wire racks to cool., For frosting, in a large bowl, combine the confectioners' sugar, butter, ginger, salt, cinnamon and enough water to achieve spreading consistency. Frost and decorate cookies with candies as desired.

SECRET TREAT MOLASSES COOKIES
Steps:
- In a large mixing bowl, cream butter and sugar. Add egg; mix well. Beat in molasses. Combine flour, baking soda, salt, cinnamon and ginger; add to creamed mixture and mix well. (The dough will be very stiff.) Cover and chill several hours or overnight.
- On a lightly floured surface, roll dough to 1/8 inch thickness; cut into 2-1/4 inch to 2-1/2 inch circles. Place 1/2 tsp. preserves on half of the circles; top with remaining circles. Pinch edges together to seal. Place on greased baking sheets.
- Bake at 350 degrees F for 10 minutes or until lightly browned. Cool on wire rack. Combine glaze ingredients and frost cooled cookies.

Steps:
- Heat oven to 375 degrees. Line 2 baking sheets with parchment paper; set aside. In an electric mixer, use the paddle attachment to combine butter and brown sugar; mix on high speed until fluffy, about 2 minutes.
- Add egg and molasses, and mix on medium speed until combined, about 20 seconds, scraping down the sides of the bowl once.
- In a medium bowl, whisk together flour, baking soda, and salt; add to butter mixture. Mix on low speed to combine, 20 seconds.
- Using 2 spoons, drop 2 teaspoons of batter on a baking sheet; repeat, spacing them 3 inches apart. Bake for 5 minutes. Sprinkle tops of cookies with granulated sugar, rotate sheets between oven shelves, and bake 8 minutes more. Rotate sheets again and bake until cookies are just brown around the edges, about 6 minutes more. Slide parchment with cookies onto a wire rack; let cool for 15 minutes. Store in an airtight container.
