Steps:

  • Preheat oven to 400˚F/200˚C.
  • Remove excess moisture from chicken wings with a paper towel.
  • In a large bowl, stir in baking powder and salt until chicken is thoroughly coated.
  • Bake on a baking rack for 1 hour, or until golden brown and crispy, flipping every 20 minutes. (For best results, place baking rack on a baking sheet covered with parchment paper or foil to catch drippings).
  • In a skillet, combine soy sauce, honey, and brown sugar on medium heat. Bring to a boil and add in sesame seeds.
  • Once sauce is thickened, stir in chicken wings until fully coated.
  • Serve with your favorite side dish or dipping sauce.

Steps:

  • Whisk together the water, soy sauce, sugar, pineapple juice, vegetable oil, garlic, and ginger in a large glass or ceramic bowl until the sugar has dissolved. Add the chicken wings, coat with the marinade, cover the bowl with plastic wrap, and marinate in the refrigerator for at least 1 hour.
  • Preheat an oven to 350 degrees F (175 degrees C). Grease baking dishes, and set aside.
  • Remove the chicken from the marinade, and shake off excess and place the chicken wings into the prepared baking dishes. Discard the remaining marinade. Bake the wings in the preheated oven until the chicken is cooked through and the glaze is evenly browned, about 1 hour.

Steps:

  • with a sharp knife, cut the tips off the chicken wings and save them for stock. Slash The inside of the wing joint to help them cook more evenly, but don't cut them all the way through. Sprinkle liberally with the chicken wing dry rub. Set aside.
  • To make the sauce, mix the soy sauce and brown sugar together in a medium microwave safe bowl. Add the oil, rice vinegar, garlic, ginger, and pepper. Mix well. Microwave on high for one minute. Stir, and microwave on high for another 30 seconds. Set aside.
  • Prepare the grill for cooking over direct medium heat. Grill the wings for about 25 minutes, turning often. The wings are done when they are nicely browned and the juices run clear. Remove the wings to a platter. You may serve the wings whole but if you prefer to serve them in individual segments, cut them apart now. Transfer the wings to a bowl. Pour the sauce over the wings. Toss to coat well. To serve, transfer to a platter and top with scallions. Serves 10
  • Chicken wing dry rub: 2 tablespoon salt 2 tablespoons sugar in the raw 2 tablespoons granulated garlic 2 tablespoons onion powder 2 tablespoons paprika 2 teaspoons good-quality chili powder 2 teaspoons finely ground black pepper 1 teaspoon lemon pepper 1 teaspoon ground cumin 1/4 teaspoon cayenne pepper mix together and store in an airtight container. Makes about 3/4 cup.

  • Preheat the oven to 400 degrees F.
  • Season the chicken wings with salt and pepper and drizzle a little olive oil on them to prevent sticking. Lay the wings in a single layer on a baking sheet. Bake for 30 minutes or until the skin gets crispy and the wings are cooked through.

  • Preheat your oven to 400°F with the oven rack in the top position. Line a baking sheet with foil and place a wire rack on top.
  • Grab your wings! If have whole wings, break them down following these instructions: Using a sharp chef’s knife, slice through the joint between the tip and the wing. If you make sure you’re cutting through the joint and not the bone, the knife will slide through pretty easily. Place the tips in sealed bag or container in the freezer for bone broth. Next, use the tip of your knife to cut between the wing and the drumette until the joint is exposed. Again, cut through the joint (not the bone) to split these two sections apart. If you hit the bone, re-position your knife. Repeat until done.
  • Place the wings and drumettes in a large bowl, and sprinkle with salt and pepper. Toss the wings with your hands to ensure even seasoning.
  • Place the seasoned wings and drumettes in a single layer on the wire rack, and bake for 50 minutes or until crispy. My oven has some hot spots, so I like to rotate the tray at the halfway point (~20 minutes).
