SHEET-PAN CAJUN SALMON

This full sheet-pan dinner, ready in 30 minutes, couldn't be any smarter or easier. Here, salmon, potatoes and asparagus are all added to the same tray at different points for a one-pan meal that makes cleanup seamless. A marinade infused with Cajun seasoning and paprika infuses the salmon, adding smokiness and some color. The bite in the asparagus plays off the flaky tenderness of the salmon, and the baby potatoes round it out. This meal stands on its own, but you could also put the leftovers over lettuce for a lunch salad the next day.

Sheet-Pan Cajun Salmon image

Steps:

  • Heat oven to 425 degrees. Place salmon on a plate, skin side up. Using a sharp knife, make a cut into the skin about 1/8-inch deep, in 3 different places, making sure not to cut all the way through the flesh. In a medium bowl, mix together 2 tablespoons olive oil with the Cajun seasoning, paprika and 1 teaspoon salt. Pour over the salmon to coat it on both sides and set aside to marinate.
  • To a rimmed sheet pan, add potatoes, 1 tablespoon olive oil, 1 teaspoon salt, and pepper to taste. Toss to coat and roast for about 15 minutes until tender. (Larger potatoes may take longer.)
  • As potatoes roast, toss the asparagus with the garlic, the remaining 1 tablespoon oil, 1 teaspoon salt, and pepper to taste.
  • Move the potatoes to one end of the pan and place salmon skin side up next to them. Add asparagus in an even layer to the other end of the pan, and roast everything together for 10 to 13 minutes, until the asparagus is tender and the salmon is cooked to taste. If you'd like the skin to be crispy, you can transfer the vegetables from the pan to a serving platter and pop the fish under the broiler for 1 to 2 minutes. Serve hot.

4 (8-ounce) skin-on salmon fillets, pin bones removed
4 tablespoons extra-virgin olive oil
1 teaspoon Cajun seasoning

1 pound baby potatoes

One-pan salmon with roast asparagus image

Steps:

  • Heat oven to 220C/fan 200C/gas 7. Tip the potatoes and 1 tbsp of olive oil into an ovenproof dish, then roast the potatoes for 20 mins until starting to brown. Toss the asparagus in with the potatoes, then return to the oven for 15 mins.
  • Throw in the cherry tomatoes and vinegar and nestle the salmon amongst the vegetables. Drizzle with the remaining oil and return to the oven for a final 10-15 mins until the salmon is cooked. Scatter over the basil leaves and serve everything scooped straight from the dish.

Greek Sheet Pan Salmon and Asparagus image

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking sheet with parchment paper.
  • Cut salmon into 4 even pieces and place in the middle of the prepared sheet pan. Sprinkle with garlic salt. Scatter asparagus around salmon.
  • Stir together olive oil, lemon juice, and Greek seasoning in a small bowl. Combine feta cheese and olives in a second bowl.
  • Brush half the oil mixture over salmon and drizzle the remainder over the asparagus.
  • Bake in the preheated oven until salmon easily flakes with a fork, 12 to 15 minutes, depending on thickness of the salmon. Sprinkle salmon with feta mixture during the last 5 minutes of cooking.

  • POTATOES: Position a rack in the center of the oven and preheat the oven to 425ºF. Line a large sheet pan with parchment paper or foil. In a medium bowl, melt 2 tablespoons of butter. Add the oil, ¼ teaspoon kosher salt, ¼ teaspoon black pepper, and 2 teaspoons minced garlic and stir to combine. Toss potatoes in this mixture then transfer to the sheet pan and spread the potatoes out. Roast the potatoes for 20 minutes.
  • SALMON + ASPARAGUS: While potatoes are roasting, add the remaining softened butter to a small bowl, add ¼ teaspoon black pepper, minced garlic, red pepper flakes, lemon zest, lemon juice, parsley, and stir to combine. When the potatoes are done, push to one side of the sheet pan. Place the asparagus on the other side. Place the salmon fillets in the center and make sure to pat the flesh dry. Then, place a tablespoon of the prepared butter on each fillet and spread with a knife. Dollop the remaining butter mixture over asparagus.
  • BAKE: Top salmon with lemon slices, if desired. Place the sheet pan back in the oven for about 9-10 minutes. When the salmon is done, check to make sure it registers at least 145ºF on a meat thermometer. I like to hit the broil setting for a quick 30-60 seconds to give it a bit more color but that is optional. Serve warm!
