SHEILA'S MEATLOAF

The gravy is wonderful over mashed potatoes!

Steps:

  • Take all ingredients except soup and mix in a large bowl.form into a loaf and transfer to a glass casserole dish or loaf pan with plenty of room for juices.
  • Place meatloaf in oven and cook for approx.. 1 hr or until juices run clear, when juices run clear drain off some of the juice, then take the mushroom soup and spoon over the meatloaf and return to the oven for 15-20 minutes or until the soup is heated through.
  • Remove the meatloaf from the oven stir to mix the remaining juices and soup together to make a nice rich gravy, slice the meatloaf and serve, spoon gravy over meat.

Steps:

  • Preheat the oven to 325 degrees F.
  • Heat the olive oil in a medium saute pan. Add the onions, thyme, salt, and pepper and cook over medium-low heat, stirring occasionally, for 8 to 10 minutes, until the onions are translucent but not brown. Off the heat, add the Worcestershire sauce, chicken stock, and tomato paste. Allow to cool slightly.
  • In a large bowl, combine the ground chuck, onion mixture, bread crumbs, and eggs, and mix lightly with a fork. Don't mash or the meat loaf will be dense. Shape the mixture into a rectangular loaf on a sheet pan covered with parchment paper. Spread the ketchup evenly on top. Bake for 1 to 1 1/4 hours, until the internal temperature is 160 degrees F and the meat loaf is cooked through. (A pan of hot water in the oven, under the meat loaf, will keep the top from cracking.) Serve hot.

2 1/2 pounds ground chuck (81 percent lean)
1/2 cup plain dry bread crumbs (recommended: Progresso)
2 extra-large eggs, beaten
1/2 cup ketchup (recommended: Heinz)

This is a very easy and no fail recipe for meatloaf. It won't take long to make at all, and it's quite good!

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In a large bowl, combine the beef, egg, onion, milk and bread OR cracker crumbs. Season with salt and pepper to taste and place in a lightly greased 9x5-inch loaf pan, or form into a loaf and place in a lightly greased 9x13-inch baking dish.
  • In a separate small bowl, combine the brown sugar, mustard and ketchup. Mix well and pour over the meatloaf.
  • Bake at 350 degrees F (175 degrees C) for 1 hour.

SHELIA'S ITALIAN MEATLOAF

This is comfort food at its best with an Italian twist. It is savory, delicious, and filling. My mother always made meat loaf with these seasonings and I learned it this way and this is the only meat loaf I make. It has been a favorite in our family for many years. I've been making this for so long that I can dump and pour and it always turns out good, however, I made the meatloaf using these measurements so I could share the recipe and it turned out perfect.

Steps:

  • Crumble meat into a large bowl, add the next 11 ingredients and mix well I use my hands, until the ingredients are thoroughly incorporated. Spray the loaf pan with cooking spray. Shape the meat mixture into the loaf pan leaving space between the inside walls of the pan and the meat. Place in a preheated 350 degree oven. Cook for 40 to 45 minutes. Remove and pour the tomato sauce over the cooked meat. Return to the oven and cook an additional 10 minutes.

  • Mix all ingredients except cheese & bacon.
  • Shape into 2 meatloaf pans, make well the length of each loaf & fill with cheese. Pull meatloaf up over the cheese & seal. Cover with tomato juice. Place 2 strips of bacon on each loaf.

  • Mix milk with stuffing until moist.

  • Preheat oven to 400 degrees F.
  • In a large mixing bowl, combine ground beef, eggs, onion, ketchup, salt and pepper, oats, bread crumbs, and half the can of soup.
  • Spray a baking sheet with nonstick cooking spray.
  • Form meatloaf mixture into 12 patties and place on baking sheet.

Steps:

  • 1. Preheat the oven to 350°F.
  • 2. Place the chuck, onion, parsley, 2 tablespoons of the chili sauce, the Worcestershire sauce, salt, and pepper in a bowl. Toss together lightly.
  • 3. Form the meat into a 3x5-inch oval loaf on a lightly greased rimmed baking pan. Brush the remaining tablespoon of chili sauce over the meat loaf. Bake for 30 minutes or until cooked through.   • 1. Preheat oven to 375. 2. Melt butter in skillet and add onion, scallion, carrots, celery, bell pepper & garlic. Cook, stirring often until moisture has evaporated (10 min). Set aside to cool. Chill for an hour. 3. Combine salt, black pepper, cayenne, cumin, nutmeg, and eggs in a mixing bowl and beat well. Add ketchup and 1/2 & 1/2, Blend. 4. Add the chuck, sausage, and bread crumbs to the egg mixture. Then add the chilled vegetables and mix thoroughly with your hands, kneading for 5 minutes. 5. With damp hands, form the mixture into an oval approximately 17 x 4 1/2 x 1 1/2 inches, resembling a long loaf of bread. 6. Place the meatloaf in a baking dish, and place the dish inside the lasagna pan. Pour boiling water into the larger pan until it reaches halfway up the sides of the baking dish. 7 Place the pan in the oven and bake for 60 minutes. 8. Remove the baking dish from the water bath and let rest for 20 minutes before slicing and serving.
