Healthy Shepherd's Pie with Cauliflower Mash image

Steps:

  • Heat avocado oil in a very large skillet over medium-high heat. Add celery, mushrooms, and onion; saute until onion is translucent, 5 to 7 minutes. Crumble turkey into the skillet. Add parsley, thyme, garlic powder, pepper, red pepper flakes, and salt. Cook until turkey is no longer pink and has absorbed most of the liquid in the skillet, about 15 minutes.
  • Sprinkle almond flour over the turkey mixture and cook for 1 minute. Stir in tomato sauce until combined; cook until thickened, about 5 minutes. Transfer to a 9x13-inch baking dish and top with sliced zucchini.
  • Preheat the oven to 350 degrees F (175 degrees C).
  • Cook cauliflower rice in a large nonstick skillet over medium heat, stirring occasionally, until hot, about 5 minutes. Set 1 cup aside in a large bowl. Transfer remaining cauliflower rice to a food processor with milk and 1 tablespoon butter; blend until smooth. Mix with reserved rice for added texture.
  • Spread cauliflower mixture over the meat and zucchini. Cut remaining 1 tablespoon butter into small pieces and dot over the cauliflower. Sprinkle with paprika.
  • Bake in the preheated oven until the cauliflower topping has a golden hue, 30 to 35 minutes.

  • In a heavy skillet cook ground beef and onions until beef is brown and onion is tender. Drain well.

  • Preheat oven to 450.
  • Brown Ground chuck in a skilliet.
  • Heat mixed vegetables in the microwave with 1/2 cup of water.
  • Once the beef is brown, put the vegetables in the beef and simmer for 5 minutes.
  • Drain the beef/vegetable mixture.
  • Put back in the skillet and add spaghetti sauce and simmer for 10 minutes.
  • Meanwhile,add 1 cup of the gouda cheese to the potatoes and microwave for 1 1/2 minutes.
  • Pour the beef mixture into a 9x9 casserole dish.
  • Put the potato mixture on top and top with remaining gouda cheese.
  • Brown in the oven until the cheese is slightly golden.

Kasha Potato Cabbage Hash #5FIX image

Steps:

  • Dice 1 cup of green cabbage into 1/2" dice.
  • Slice 3/4 cup of scallion into thin slices and keep the white part separate from the green.
  • Bring 1 1/2 cups of water to a boil in a small covered sauce pan and add 3/4 cup kasha and 1/2 tsp salt and reduce heat to a simmer. Simmer in covered pan for 12-15 minutes until all the water is absorbed. Grains should retain shape and be firm and not mushy.
  • Bring large oiled (canola) nonstick skillet to medium high heat and add 2 cups Simply Potatoes (diced with onions), 1 cup cabbage, white parts of the scallions and 1/2 tsp salt. Saute in skillet stirring infrequently so all sides of the potatoes brown and cook all the way through. This should take 10-12 minutes. When potatoes are cooked stir in green parts of the scallions and the kasha and mix thoroughly. Serve immediately and enjoy!

  • Peel and dice the carrot and onion into small pieces. When done, add to ground beef and cook on high until almost browned. Reduce to a simmer, and add beef broth/stock. Let simmer for an hour, until the liquid has reduced and thickened. Remove from heat, and let sit for 10 minutes. Preheat your oven to 350 degrees. Add Simply Potatoes Traditional Mashed Potatoes to the top of the beef mixture, and spread evenly. When fully covered, bake for approximately one half hour, until the potatoes have lightly browned.

  • Sautee oniion and carrot in a skillet with EVO until translucent, stir in ground beef to brown, salt, pepper to taste, once meat has started to brown add beef gravy, (I use the left over gravy from pot roast) but you can use any prepared gravy you like.
