Steps:

  • Combine 2 chopped tomatoes, 1 chopped cucumber, 1 chopped Italian frying pepper, 1/4 cup finely chopped red onion and 1/2 cup chopped parsley in a bowl. Toss with 3 tablespoons olive oil, 1 1/2 tablespoons lemon juice, 3/4 teaspoon kosher salt, and pepper to taste. Let stand 10 minutes before serving.

It's definitely our family comfort go-to food. Steps:

  • Preheat oven to 375°. In a large skillet, cook beef, mushrooms and onion over medium-high heat 6-8 minutes or until beef is no longer pink, breaking beef into crumbles; drain., Stir in seasonings. Add tomatoes, corn and green beans; heat through, stirring occasionally. In a small bowl, mix soup and water., In a greased 13x9-in. baking dish, layer half each of the following: beef mixture, potatoes and soup mixture. Repeat layers. Sprinkle with cheese and, if desired, french-fried onions and bacon bits., Bake, covered, 1 to 1-1/4 hours or until bubbly and potatoes are tender. Let stand 10 minutes before serving.

Steps:

  • Boil ramen noodles in water until tender. Drain and set aside.
  • Meanwhile, heat oil in skillet until shimmering. Add beef and cook until no longer pink, breaking up any large clumps with the edge of a spoon, about 5 minutes. Drain any excess fat and discard.
  • Add onion, water, Worcestershire sauce and peas. Season to taste with salt and pepper. Transfer to an oven-safe dish, top with cooked noodles, and broil until brown and crispy.

The trick to thickening the soup with cornstarch is to turn the heat down slightly and keep the soup moving so the cornstarch does not form clumps.
