TURKEY GRAVY
I cooked my first turkey last night, wanting to get rid of the huge frozen turkey taking up space in our freezer. This recipe came out of one of my Better Homes & Gardens cookbook, and came out wonderful. I expected it to be much harder, since I have never made gravy or a turkey before.

Steps:
- After turkey has been roast, pour juices from turkey into a large measuring cup.
- Skim off all fat, reserving a ¼ cup of it.
- Discard rest of fat.
- Pour fat into a medium sized saucepan.
- Stir in ¼ cup flour.
- In measuring cup, add enough water or chicken broth to equal 2 cups.
- Turn stovetop to medium heat and slowly pour in juices/water or chicken broth mixture.
- Stir over medium heat until thickened and bubbly.
- Salt& pepper to taste.
- Enjoy!

TURKEY GRAVY
The drippings from your roast turkey are the base for this gravy. If you do not have enough turkey fat after straining your drippings, add melted butter to make up the difference.

- Pour drippings from the roasting pan into a heatproof glass bowl or large measuring cup. Let stand for 5 minutes, then skim off and reserve the fat that has risen to the top. Add enough turkey stock to the skimmed drippings to make 8 cups total. Measure 3/4 cup fat.
- Heat the reserved fat in a large skillet over medium heat. Whisk in flour and cook until lightly browned, 8 to 10 minutes. Whisk in the turkey stock mixture and sherry. Cook, whisking often, until gravy has thickened and no trace of raw flour taste remains, about 5 minutes. Transfer the gravy to a warmed gravy boat.

ROAST TURKEY WITH SAGE AND SHERRIED CIDER GIBLET GRAVY
Steps:
- Preheat oven to 425° F.
- Rinse turkey and pat dry inside and out. Season turkey inside and out with salt and pepper and pack neck cavity with 1 lemon wedge, 1 sage sprig, and 1 bread slice. Fold neck skin under body and fasten with a skewer. Fill body cavity with apple, onion, 3 sage sprigs, and remaining lemon wedge and bread slice and truss turkey.
- Rub turkey with remaining 3 sage sprigs and arrange sprigs on a rack set in a roasting pan. Spread turkey with butter and arrange on rack in roasting pan. Roast turkey in middle of oven 30 minutes.
- Reduce temperature to 325° F. and baste turkey with pan juices. Add water to roasting pan and roast turkey, basting every 20 minutes, 2 1/2 to 3 hours more, or until a meat thermometer inserted in fleshy part of a thigh registers 180° F. and juices run clear when thigh is pierced. Transfer turkey to a heated platter, reserving juices in roasting pan, and discard string. Keep turkey warm, covered loosely with foil.
- Make gravy:
- Skim fat from pan juices, reserving 1/4 cup fat, and on top of stove deglaze pan with Sherry over moderately high heat, scraping up brown bits. Stir in cider. Bring Sherry mixture to a boil and remove pan from heat.
- In a heavy saucepan whisk together reserved fat and flour and cook roux over moderately low heat, whisking, 3 minutes. Add Sherry mixture and 2 cups stock or broth in a stream, whisking to prevent lumping, and simmer, whisking occasionally, 10 minutes. Whisk in additional stock or broth to thin gravy if desired. Season gravy with salt and pepper and transfer to a heated gravy boat.
- Garnish turkey with sage.

- Preheat the oven to 400°F/200°C/Gas 6. Wash the giblets in cold water, place in a large pan with 1.5 litres of cold water. Bring to the boil and remove any scum off the top of the water with a slotted spoon. Then add the rest of the ingredients, cover and simmer for 40 minutes.
- Uncover the pan and simmer for a further 20-30 minutes or until the stock has reduced by half. Remove from the heat and strain into a bowl, leave to cool, cover and place in the fridge or use immediately.
- To make the gravy, bring the stock back to the boil and remove from the heat. When the turkey is cooked pour off the fat from the roasting juices, place the tin on the hob, whisk in the flour and place over a low heat. Cook the flour mixture making sure you have scrapped up all the meaty sticky bits on the bottom of the tin and stir constantly.
- After 2 minutes, remove from the heat and whisk in the turkey giblet stock and redcurrant jelly, bring slowly to the boil. Add the sherry and cook for a further 3 minutes, stirring constantly. Season to taste, add a little more sherry if you want and then strain into a warm jug and serve. Any leftover turkey sherry gravy can be frozen and the giblet stock can be made 2 days before required.

- Pour all of your drippings through a strainer. Dispose of any bits and pieces collected in the strainer. Let the drippings sit in a large measuring cup or bowl for about 10 minutes. Spoon off most of the fat off the top of the drippings. I like to leave about two tablespoons.
- Add sherry to a medium saucepan. Turn the heat on medium-high and bring to a boil. Reduce to a simmer. Simmer until reduced by half.
- Add in enough turkey stock to the drippings to equal 2 1/2 cups of liquid. Add the drippings to the sherry, whisk to combine . Slowly whisk in the the slurry as well. Bring to a boil and reduce to a simmer. Continue to simmer until the gravy is thick, about 5-6 minutes.
