SIZZLING SHERRY SHRIMP WITH GARLIC
This recipe is from Spain. Sherry or lemon juice is not always used, but either one adds a nice contrast to the richness of the oil and garlic. You can easily substitute squid or scallops for the shrimp.

- Heat olive oil, garlic, red pepper flakes, and paprika in a large skillet over medium-high heat. Once the oil is hot and the garlic has turned golden brown, increase heat to high and add the shrimp. Cook until the shrimp turn pink and opaque, about 3 minutes.
- Deglaze the pan with sherry or lemon juice and season to taste with salt and pepper. Serve garnished with chopped parsley.

Steps:
- Peel and devein shrimp; toss shrimp with creole seasoning; set aside.
- Cook pasta according to the package directions; drain and keep warm.
- In a large skillet over med-high heat, melt the butter.
- Add in shrimp; stir/saute 5 minutes or until shrimp turn pink.
- Remove shrimp from skillet; add green onions and garlic to skillet; stir/saute 2-3 minutes or until tender.
- Lower heat to medium; stir in cream and hot sauce.
- Bring to a boil; lower heat and simmer, stirring constantly 8-10 minutes or until sauce is slightly thickened.
- Stir in shrimp and parsley.
- Toss with pasta.
- Sprinkle with parmesan cheese and serve.

SEAFOOD PASTA WITH SHERRY TOMATO CREAM SAUCE

- In a large saucepan boil water for the pasta. When water begins to boil add salt liberally, let water return to a boil and cook pasta to al dente. Drain.
- Heat a large skillet over medium heat with olive oil, 3 turns of the pan. Add mushrooms, shallots and garlic, red pepper flakes and saute 5 minutes. Deglaze the pan with sherry, stir in stock and tomatoes and bring to a bubble. If using raw seafood, season with lemon zest, salt, and pepper. Raise the heat a bit then add the seasoned seafood and heat through or cook until just about firm and opaque, a couple of minutes. If using cooked seafood, season the seafood when you add it to skillet with lemon zest, salt and pepper.
- Stir in heavy cream and toss hot pasta with sauce and chives and/or parsley, adjust seasoning and serve.
CREAMY "GRITS" WITH CREOLE SHRIMP

- Heat a large skillet over medium high heat. Add extra-virgin olive oil and 1 tablespoon butter. When butter melts into extra-virgin olive oil, add garlic, onions, celery, bell peppers, thyme, bay leaf then season with salt and pepper. Cook veggies 7 to 8 minutes until tender, add in the Worcestershire, 1 to 2 tablespoons hot sauce (medium to spicy heat level) and the flour and cook 1 minute more then add in beer and cook it off, another 30 seconds or so. Whisk in 1 cup of stock then add tomatoes and okra, if using, and bring to a bubble. Add shrimp and cook 3 to 5 minutes, until shrimp turn pink and firm then turn off heat. Remove thyme stems and bay leaf.
- Bring remaining 2 tablespoons butter, 2 cups stock, 1 cup milk and 2 teaspoons hot sauce, to a boil in a sauce pot. Stir in 1 cup quick cooking polenta. Stir constantly to mass the cornmeal. Once the mixture thickens to the consistency of whipped potatoes, season the "grits" with salt and divide among dinner plates.
- Serve generous ladles of shrimp and sauce on a bed of creamy "grits".

SEAFOOD PASTA WITH SHERRY TOMATO CREAM SAUCE
This is a Rachael Ray recipe that I've played with just a bit. I'm planning to try it with imitation crab rather than the lobster. You'll want to use a good quality dry sherry, not cooking sherry.

SHERRY'S SCRUMPTIOUS SHRIMP SAUCE FOR PASTA
Where I live everyone has their own version of a local favorite " shrimp sauce." Served over angel hair pasta it can be a very elegant dinner. I have several variations to this basic recipe. You can use crawfish tails instead of shrimp. Also you can use a nice white wine instead of evaporated milk. Sometimes I add mushrooms...you get the idea!

- In a skillet on medium -high heat melt the butter. Add the green onion tops and bottoms chopped nicely and the minced garlic. Saute' for about 2 minutes.
- Add the shrimp that have been cleaned, deveined, and drained. Season with the salt, pepper, basil,parsley, garlic powder, and cayenne pepper. Cover and continue sauteeing on medium heat for 3 or 4 minutes.The shrimp will release a good amount of water. This is good.
- Remove the lid and reduce the heat to medium. Add the cream cheese in cubes. Add the cream of shrimp soup, grated parmesan and evaporated milk. Stir constantly with a wooden spoon until it appears nice and creamy. If it begins to stick you need to reduce the heat a little.
- Cover and continue to cook on medium for about 10 minutes. Reduce heat to low and serve. Serve over angel hair pasta.

- In a medium bowl, add shrimp, minced garlic, and creole seasoning. Rub and mix gently. Add olive oil and mix again.
- Bring a large pot of water (salted) to a boil over high heat. Cook the pasta until tender but still firm to the bite, stirring occasionally. Drain pasta. Set aside.
- Meanwhile, in a large skillet over medium-high heat, warm 1 tablespoon olive oil. Add shrimp and sear the first side for 2 minutes. Flip and cook for another minute or so, until slightly golden brown. Transfer to a small plate and set aside.
- In the same skillet over medium heat, add 1 tablespoon butter. Add onion and cook for 6 – 7 minutes until softened. Add garlic and toss for 30 seconds. Add tomato paste and 1¼ teaspoons creole seasoning. Stir to mix for 30 seconds. Add crushed tomatoes, chicken broth, and heavy cream. Bring to a boil and reduce to a simmer for 5 minutes. Add pasta and cook for another 3 minutes until sauce is thickened and reduced. Taste and adjust with salt or creole seasoning. Toss the shrimp back to skillet and cook for 2 more minutes. If needed, add more broth. Transfer to serving plates, sprinkle with parsley and serve immediately.
