Steps:
- Peel the beets and potato and grate them on the coarse holes of a box grater. Toss with the salt and place in a colander. Squeeze the mixture and press with your hands to extract as much liquid as possible.
- Combine the hot water, gelatin powder, chili powder, onion powder and pepper to taste in a bowl and stir until dissolved. Pour the mixture over the grated beets and potatoes and mix quickly to distribute.
- Divide the mixture into 3 equal parts and place each on its own long sheet of plastic wrap. Form into cylinders approximately 3/4- to 1-inch thick and wrap tightly in plastic wrap. Place in the freezer to firm, 8 hours or up to overnight.
- Add 2 inches of oil to a high-sided saute pan and heat over medium-high heat until it registers 375 degrees F on a deep-frying thermometer.
- Unwrap the rolls and slice into 1-inch pieces. Fry in batches until golden brown, 3 to 4 minutes per batch. Drain on a rack and sprinkle with salt before serving with the Spiced Yogurt and Avocado Crema.
- In a food processor, pulse together the cilantro, oil, lime extract, cumin, salt, black pepper, avocado and jalapeno until blended together smoothly. Add the yogurt and blend until smooth and creamy. Taste and adjust the seasoning with lime extract and salt.

- Preheat oven to 400°F (200°C).
- On a cutting board, grate the zucchini, sweet potato, carrot, and broccoli with a coarse cheese grater.
- Transfer the grated vegetables to a medium bowl and season with ½ teaspoon of salt. Mix until well incorporated.
- Let the vegetables sit for 20 minutes until the salt has drawn out some of the moisture.
- Transfer the grated veggies into a kitchen towel and twist to strain as much liquid as you can.
- Place the grated veggies back into a bowl and mix with the Parmesan, panko, pepper, remaining salt, onion powder, garlic powder, olive oil, and egg. Mix until well combined.
- Form the mixture into 20-25 even-sized tots and transfer to a parchment paper-lined baking sheet.
- Bake for 20-30 minutes or until tots are golden brown, flipping each halfway through.
- Serve with your choice of dipping sauce.

- Preheat oven to 400°F (200˚C.)
- Grate the zucchini into a bowl and salt generously.
- Allow zucchini to sit for 20 minutes as the salt draws out moisture.
- Pour zucchini onto a clean dish towel and wring it out over the sink or into a separate bowl.
- Pour the zucchini back into your bowl and add bread crumbs, cheddar cheese, eggs, garlic powder, and pepper. Mix together until well-blended.
- Take a tablespoon of mixture and roll it into a tot, repeat for rest of mixture.
- Place on a greased baking sheet and place in the oven for 20-25 minutes or until tots are crunchy. Serve warm.

Steps:
- Heat oven to 425ºF.
- Bake TATER TOTS as directed on package.
- Meanwhile, cook peppers and onions in medium nonstick skillet on medium heat 3 to 5 min. or until crisp-tender, stirring frequently. Add meat; cook on medium-low heat 5 min. or until heated through, stirring occasionally.
- Microwave VELVEETA and milk in microwaveable bowl on HIGH 2 min. or until VELVEETA is completely melted and mixture is well blended, stirring every 30 sec.
- Spread TATER TOTS onto platter; top with meat mixture. Drizzle with VELVEETA sauce.
