Steps:
- Preheat the oven to 350 degrees F. Coat a miniature-muffin tin with cooking spray.
- Split each biscuit in half and place each half in a muffin cup, pressing it into the bottom and up the sides.
- In a medium-size bowl, mix the cheese, scallion, mayonnaise, shrimp and dill. Place 1 tablespoon of the shrimp mixture on top of each biscuit. Bake for 20 minutes, or until the puffs are golden and bubbling.

Shrimp and rice are two foods that are abundant in our area. These shrimp puffs are my family's favorite. In fact, they prefer them to fried shrimp.

- In a large bowl, beat the egg yolks, milk and oil. Combine the flour, baking powder, onion powder, salt and pepper; add to yolk mixture and mix well. Stir in the rice, shrimp, parsley and pepper sauce., In a bowl, beat egg whites until soft peaks form; fold into shrimp mixture. , In an electric skillet or deep-fat fryer, heat oil to 350°. Drop batter by tablespoons into hot oil. Fry puffs, a few at a time, for 1-1/2 minutes on each side or until browned and puffy. Drain on paper towels. Serve warm.

Great tasting appetizer. My Mother-in-Law gave me this recipe 20 yiears ago. It is very easy all you do is make a cream puff batter, add the next 5 ingredients and deep fry.

- Heat butter and water in large sauce pan, when it boils add flour all atonce and beat until it forms a paste. Let cool. Add eggs 1 at a time beating well after each addition. Add shrimp, cheese, onion, salt and pepper and Tobasco sauce and mix well. Heat oil to 375 degrees. Drop by tablespoon full into hot oil and fry until golden brown. (about 5 minutes). Serve immediately. May be frozen and reheated in the oven.

- Soften cheese and work all ingredients together with hands, and roll into balls the size of marbles.
- Bake at 350 for 15 minutes.
- Makes 6 dozen.
- Note: These can be frozen for months.
- To freeze: place on cookie sheet, freeze then store in plastic bag.
- Bake when needed.

DEEP FRIED CURRY PUFFS
Thee beautiful little curry puffs can be served individually as an entree, or served with salad as a main meal. If you are looking for a healthy option, they can be baked also. The beauty of this dish is you can not only freeze the mixture, but you and make up as many curry puffs as you like and freeze them until needed. This makes it a great recipe for a mid-week meal.

- On a medium heat, fry off curry paste until fragrant.
- Add onion and fry until translucent.
- Add Beef mice and cook until browned.
- Add water and cook until the mixture reduces to a dry consistancy.
- Take off the heat and put aside until cooled (this step can be done a day ahead or frozen until needed).
- Lay out puff pastry and cut into 4 portions (a circular pastry cutter works well also).
- Spoon 1 tablespoon of the mix into each pastry square.
- Fold one corner over to its diagonal counterpart and press down with a fork (or pinch for a more decorative finish).
- Ensure all the sides are closed, or the mince will escape while frying.
- Brush with the beaten egg and prick with a fork to help release air wile cooking.
- Repeat this process until all the pastry or mice is used (I usually get about 16 from one lot of mice, but 8 is plenty for 4 people, so feel free to freeze any left over mince).
- Deep fry until golden and crispy.
- Serve individually with a dipping sauce of your choice as an entree, or serve with a side salad or rice as a main meal.

- Whisk the egg in a small bowl. Add ½ cup (60 g) of flour and the cold water and whisk to combine. Cover with plastic wrap and chill in the refrigerator.
- Add the remaining flour to a shallow dish. Dredge each shrimp in the flour, shaking off any excess.
- Heat the oil in a large pot until it reaches 350°F (180˚C).
- Dip the floured shrimp into the chilled batter.
- Fry the shrimp until they float to the top and are golden brown in color. Use a slotted spoon to transfer the shrimp to a paper towel-lined plate to drain.
- In a medium pan, combine the dashi, soy sauce, and mirin, and bring to a boil over high heat. Transfer to a small bowl.
- To make the onigiri rice balls, first wet your palms with water and coat with a little bit of salt.
- Take a handful of rice and make an indent in the middle. Dip a shrimp into the soy sauce mixture, then place in the center of the rice. Wrap the rice around the shrimp, creating a triangle shape.
- Wrap a strip of seaweed around the rice ball. Repeat with remaining ingredients.

- Preheat oven to 400°. In a large skillet, melt 2 tablespoons butter over medium heat. Add bread crumbs and 1/4 teaspoon garlic powder. Cook and stir until toasted, 3-4 minutes. Transfer to a small bowl; wipe pan clean., In the same skillet, melt remaining 3 tablespoons butter over medium heat. Add shrimp and remaining 3/4 teaspoon garlic powder; cook and stir until shrimp turn pink, 6-8 minutes. Reduce heat to low; stir in 1/3 cup cream cheese, sherry, parsley, tarragon and nutmeg until combined. Remove from the heat., On a lightly floured surface, unfold puff pastry.
