SWEET AND SOUR SICILIAN TUNA
My grandmother made this recipe every Christmas Eve as part of the Feast of the Seven Fishes. We still make it today and it is my all time favorite!

Steps:
- Heat olive oil in a heavy-bottomed skillet over medium heat. Stir in the onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Reduce heat to medium-low, and continue to cook and stir until the onion is very tender and dark brown, 15 to 20 minutes more. Remove the onion from the skillet.
- Place the tuna steaks in the same skillet over medium-high heat and cook until golden brown, about 2 minutes per side. Remove the tuna steaks to a serving tray; keep warm.
- Stir the vinegar and sugar together in the same skillet until sugar is dissolved. Return the onions to the pan, and simmer until the liquid reduces and is slightly thickened, about 5 minutes. Return the tuna to the pan and cook for 3 to 5 minutes. Place the tuna on the warm serving tray and top with the onion and sweet and sour mixture.

CHEESY TUNA LASAGNA
Give your old tuna casserole recipe a break and try this Cheesy Tuna Lasagna. Chances are excellent it will become a new favorite!

Steps:
- Heat oven to 350ºF.
- Melt butter in medium skillet on medium heat. Add onions and garlic; cook and stir 3 to 5 min. or until onions are crisp-tender. Remove from heat. Stir in tuna, soup, peas, milk, oregano and pepper.
- Spread 3/4 cup of the tuna mixture onto bottom of 13x9-inch baking dish sprayed with cooking spray. Top with layers of 3 noodles, 3/4 cup of the remaining tuna mixture, half the ricotta cheese and 6 mozzarella slices. Repeat layers of noodles, tuna mixture, ricotta and mozzarella. Cover with remaining noodles, tuna mixture and mozzarella. Sprinkle with Parmesan.
- Bake 25 to 30 min. or until heated through. Let stand 10 min. before cutting to serve.

SICILIAN-STYLE TUNA STEAKS (TONNO ALLA GHIOTTA)

- 1. In a medium skillet over moderately high heat, warm the oil. Season the tuna with salt and pepper and sauté, turning once, until golden on both sides, 3 to 4 minutes total. Remove the tuna and set aside. Do not clean the pan.
- 2. In the same pan over low heat, sauté the onion, stirring frequently, until just tender, about 1 minute. Add the garlic, capers, olives, raisins, and tomatoes, and continue cooking, stirring, until heated through, about 2 minutes. If the tomatoes don't release much juice, add the fish stock or water to give the sauce some body.
- 3. Return the tuna to the pan and cover it with a tight-fitting lid. Cook over moderate heat until the tuna reaches the desired doneness, 2 to 3 minutes for medium.
- 4. Add the parsley and basil and stir to incorporate, then season to taste with salt and pepper. Serve the fish with the sauce spooned over the top; garnish with pine nuts.
LASAGNA SICILIANA

- Preheat the oven to 375 degrees F. Grease a 9-by-13-inch glass baking dish with the melted butter.
- Place the ricotta, egg, parsley, 2 teaspoons salt and 1 teaspoon pepper in a large bowl and mix thoroughly.
- Assemble the lasagna by evenly spreading 1/4 cup of the tomato sauce on the bottom of the prepared baking dish. Cover the sauce with some of the raw pasta sheets, cutting and piecing together the pasta as necessary to fit the dish (see Cook's Note).
- Spread 3/4 cup of the ricotta mixture evenly over the pasta using an offset spatula or your desired utensil. Make sure to get the ricotta to the edges and corners of the dish. Pour 1/2 cup of the tomato sauce onto the ricotta and spread evenly.
- Sprinkle 1 lightly filled (not packed) cup of the mozzarella over the top, followed by a light handful of Grana Padano and roughly one-fifth of the cooked and chopped sausage. Repeat 4 more times, starting with the pasta.
- For the sixth and final layer, begin by laying your pasta, then spread the remaining sauce on top. Sprinkle the remaining mozzarella over the sauce. Cover the dish well with aluminum foil to trap in moisture and help the raw pasta cook.
- Bake, covered, for 30 minutes, then uncover the lasagna and cook until the lasagna has crisped and browned to your liking, 15 to 30 minutes more. Serve with extra warmed tomato sauce and garnish with any remaining Grana Padano and parsley.
TUNA SALAD "SICILIAN STYLE"
I created this after years of trial and error. It is healthy and tastes great too! I like to add 1 tablesppon chopped pickled jalapeño peppers for an added zest! I have kids now so I will leave that out! I hope you enjoy!

- Marinate tuna:
- Combine oil, lemon juice, anchovies, garlic, oregano, and tuna in a large sealable bag and seal bag, pressing out excess air. Let stand at room temperature, turning occasionally, 30 minutes.
- Grill tuna:
- Remove tuna from marinade and shake off any excess. Lightly oil grill pan and heat over medium-high heat until smoking. Grill tuna, turning once, until pale pink in center, 5 to 7 minutes. Transfer to a platter and cover with foil to keep warm.
- Meanwhile, make sauce:
- Heat oil in a 12-inch heavy skillet over medium-high heat until it shimmers. Add diced celery and cook, stirring, until tender, about 5 minutes. Stir in tomatoes, olives, and capers and cook until sauce is slightly thickened, about 5 minutes.
- Stir in basil, lemon juice, and 1/4 teaspoon each of salt and pepper and remove from heat. Spoon sauce over tuna and sprinkle with celery leaves.
TUNA LASAGNA WITH ITALIAN SPICED WHITE SAUCE

- In blender add the eggs cheese mixture in the order listed. Pulse 3 to 4 times; set aside.
- In large pan, heat boiling water and cook lasagna noodles, drain, rinse and cool. Leave in colander.
- Take the large pan and add all of the White Sauce ingredients in the order listed except the drained pimentos.
- Whisk on low to medium heat, until hot and starting to thicken. Do not boil. Add in.
- pimentos if desired. Fold in the tuna.
- Preheat oven to 375°F.
- Spray Pam in 9x13-inch pan.
- Place one layer of noodles on the bottom of pan.
- Then layer the egg/cheese mixture over noodles.
- Layer the white sauce over the egg cheese mixture.
- Repeat the procedure 3 times.
- Cover pan and cook 45 minutes.
- Let set 15 minutes.
- Cut in portions and serve.
- Note:.
- Can be partially frozen, then cut in squares and frozen in freezer bags, then reheated in the microwave.
- Serve with a tossed salad.

- In a large saucepan, saute onion in butter until tender. Stir in the tuna, soup, milk, garlic salt, oregano and pepper until combined. Spread 3/4 cupful into a greased 11x7-in. baking dish., Layer with 3 noodles (trimming if necessary), 3/4 cup tuna mixture, half of the cottage cheese and a third of the mozzarella cheese.
